,%20and%20cottage%20cheese,%20which%20for%20some%20reason%20was%20more%20like%20ricotta%20cheese%20in%20texture%20and%20taste.%20One%20of%20our%20fellow%20English%20teachers%20found%20that%20Japanese%20cottage%20cheese%20was%20a%20good%20substitute%20for%20ricotta%20in%20her%20baked%20ziti%20recipe.%20Sure%20enough,%20we%20tried%20it%20and%20it%20was%20true!%20We%20were%20reminded%20of%20that%20baked%20ziti%20when%20we%20tasted%20this%20pasta%20dish,%20but%20for%20this%20recipe%20we%20were%20able%20to%20purchase%20the%20ricotta%20we%20needed,%20and%20at%20a%20reasonable%20price!%20It%E2%80%99s%20sort%20of%20a%20cheater%20dish,%20because%20we%20used%20our%20favorite%20jarred%20marinara%20(Newman%E2%80%99s%20Own%20Organic),%20but%20we%20don%E2%80%99t%20mind%20cutting%20corners%20when%20we%20have%20an%20almost-crawling%208%20month%20old!%3C/p%3E%3Cp%3EAs%20a%20side-note,%20over%20dinner%20we%20were%20reminiscing%20about%20our%20English%20classes%20and%20remembered%20that%20one%20of%20our%20students%20said%20that%20her%20favorite%20lasagna%20recipe%20(given%20to%20her%20by%20an%20American%20English%20teacher)%20included%20cream%20of%20mushroom%20soup.%20We%20had%20never%20heard%20of%20this%20before!%20Has%20anyone%20actually%20put%20cream%20of%20mushroom%20soup%20in%20lasagna!?%20%20The%20idea%20sort%20of%20offends%20me,%20but%20maybe%20it%E2%80%99s%20a%20regional%20thing%20(?)%3C/p%3E%3Cp%3Egrated%20Parmesan%3C/p%3E%3Cp%3ECook%20the%20fusilli%20in%20boiling%20water%20for%20a%20little%20less%20time%20than%20indicated%20on%20the%20package%20so%20that%20it%E2%80%99s%20pretty%20al%20dente.%20%20Drain%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet%20over%20medium%20heat,%20saut%C3%A9%20garlic%20in%20olive%20oil%20until%20fragrant%20and%20beginning%20to%20turn%20golden,%20about%201%20minute.%20Add%20the%20spinach%20and%20stir%20until%20wilted.%20If%20skillet%20becomes%20dry,%20add%20a%20tiny%20bit%20of%20water.%20Season%20with%20a%20little%20kosher%20salt%20&%20freshly%20ground%20pepper.%3C/p%3E%3Cp%3EAdd%203/4%20of%20the%20jar%20of%20Marinara%20to%20the%20wilted%20spinach,%20a%20couple%20dollops%20of%20ricotta%20cheese,%20and%20a%20small%20handful%20of%20Parmesan.%20Stir%20to%20combine.%3C/p%3E%3Cp%3EPour%20the%20cooked%20pasta%20into%20the%20skillet%20with%20the%20sauce%20and%20gently%20toss%20to%20combine.%20Pour%20half%20the%20pasta/sauce%20mixture%20into%20a%20greased%20baking%20dish.%20Scatter%20several%20more%20dollops%20of%20ricotta%20over%20the%20pasta.%20Pour%20the%20remaining%20pasta/sauce%20mixture%20over%20the%20ricotta.%20Top%20with%20a%20liberal%20amount%20of%20shredded%20Mozzerella%20cheese,%20and%20another%20small%20handful%20of%20Parmesan.%3C/p%3E%3Cp%3EBake%20at%20375%20until%20the%20cheese%20is%20melted%20and%20the%20whole%20thing%20is%20starting%20to%20bubble,%20about%2015-20%20min.%20Place%20under%20the%20broiler%20for%20the%20last%20minute%20so%20the%20cheese%20can%20brown%20nicely.%20Let%20rest%20a%20few%20minutes%20before%20serving.%20Serves%203-4%20(or%202%20hungry%20people%20with%20leftovers).%3C/p%3E){kind=link}
