Baked Graham Cracker Pudding

Ingredientes

  • 1/2 c. butter, melted
  • 1/2 c. brown sugar
  • 24 x graham crackers, crushed
  • 1 quart lowfat milk
  • 1 pch salt
  • 3 x egg yolks, beaten
  • 1 Tbsp. vanilla
  • 1 c. white sugar
  • 1/4 c. cornstarch
  • 3 x egg whites
  • 1 tsp confectioners sugar

Direcciones

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a medium bowl, mix butter, brown sugar, and 2/3 of the crushed graham crackers. Press lightly into the bottom of a 9x13 inch baking dish.
  3. In a medium saucepan over medium heat, mix lowfat milk, salt, egg yolks, vanilla, white sugar, and cornstarch. Stirring constantly, cook till thickened, about 12 min. Pour into the baking dish.
  4. In a medium bowl, beat egg whites till soft peaks form, then fold in confectioners' sugar. Spoon over the mix in the baking dish, and top with remaining crushed graham crackers.
  5. Bake 15 min in the preheated oven, till lightly browned.
  6. Makes 12 servings
