Baked Potato Salad

Ingredientes

  • For the Potatoes
  • 4 medium potatoes wahed
  • 2 oz olive oil
  • 1 tablespoon kosher salt
  • For the Dressing
  • 8 strips applewood smoked bacon, diced and cooked
  • 2 oz butter
  • 1 bunch scallions, chopped
  • 4 oz chedder cheese shredded
  • 4 oz sour cream
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons cracked black pepper
  • 1 tablespoon salt

Direcciones

  1. FOR THE POTATOES:
  2. Wash and dry the potatoes, then rub potatoes with olive oil and season with salt.
  3. Bake in a 350 degree F oven until done. Remove from oven, let cool and dice in 1-inch chunks. Set aside.
  4. FOR THE DRESSING:
  5. In a large bowl, mix together warm bacon, butter, scallions, cheddar cheese and sour cream.
  6. Mix in hot potato chunks and season with lemon juice, cracked black pepper and salt.
