Ingredientes
- For the Potatoes
- 4 medium potatoes wahed
- 2 oz olive oil
- 1 tablespoon kosher salt
- For the Dressing
- 8 strips applewood smoked bacon, diced and cooked
- 2 oz butter
- 1 bunch scallions, chopped
- 4 oz chedder cheese shredded
- 4 oz sour cream
- 1 tablespoon freshly squeezed lemon juice
- 2 tablespoons cracked black pepper
- 1 tablespoon salt
Direcciones
- FOR THE POTATOES:
- Wash and dry the potatoes, then rub potatoes with olive oil and season with salt.
- Bake in a 350 degree F oven until done. Remove from oven, let cool and dice in 1-inch chunks. Set aside.
- FOR THE DRESSING:
- In a large bowl, mix together warm bacon, butter, scallions, cheddar cheese and sour cream.
- Mix in hot potato chunks and season with lemon juice, cracked black pepper and salt.
