%20and%20I%20ended%20up%20today%20with%20a%20couple%20packages%20of%20ground%20lamb%20that%20I%20wanted%20to%20use%20up.%3C/p%3E%3Cp%3EI%20didn't%20really%20feel%20like%20making%20a%20Shepherd's%20Pie%20.%20.%20.%20I%20wanted%20something%20to%20tantalize%20our%20tastebuds.%3C/p%3E%3Cp%3EI%20initially%20thought%20of%20Koftas,%20but%20then%20I%20settled%20on%20Kibbee.%20We%20love%20Kibbee.%20They%20are%20a%20delicious%20middle%20Eastern%20appetizer%20composed%20of%20ground%20lamb%20and%20spices.%20Cut%20into%20small%20diamonds,%20or%20shaped%20into%20little%20football%20shapes,%20they%20are%20delicious%20served%20warm%20with%20sour%20cream%20for%20dipping.%3C/p%3E%3Cp%3EWe%20had%20them%20as%20an%20entree,%20along%20with%20some%20garlic%20rice%20and%20steamed%20carrots.%3C/p%3E%3Cp%3Emmmm%20.%20.%20.%20they%20may%20not%20be%20much%20to%20look%20at,%20but%20they%20be%20mighty%20tasty!%3C/p%3E%3Cp%3ETry%20to%20imagine%20yourself%20sitting%20in%20a%20Bedoin%20tent%20in%20the%20middle%20of%20the%20desert%20as%20you%20are%20eating%20these%20.%20.%20.%20a%20gentle%20breeze%20stirring%20the%20leaves%20of%20the%20date%20palms%20on%20your%20little%20oasis,%20and%20camels%20softly%20snorting%20and%20shuffling%20in%20the%20sand%20nearby%20.%20.%20.%3C/p%3E%3Cp%3ENo,%20this%20is%20not%20typical%20English%20Food,%20but%20it's%20my%20kitchen%20and%20I%20can%20cook%20what%20I%20like%20in%20it.%20They%20do%20say%20that%20variety%20is%20the%20spice%20of%20life!!%3C/p%3E%3Cp%3E*Baked%20Spiced%20Kibbee*%3C/p%3E%3Cp%3Eserves%208%3C/p%3E%3Cp%3EA%20delicious%20middle%20eastern%20spiced%20meat%20dish,%20typically%20served%20as%20an%20appetizer.%20You%20can%20shape%20it%20into%20small%20shapes,%20or%20just%20bake%20it%20iin%20a%20square%20pan%20like%20I%20have.%20Scored%20before%20baking%20it%20very%20easily%20separates%20into%20small%20diamonds.%20We%20have%20it%20as%20a%20main%20course.%3C/p%3E%3Cp%3ECover%20the%20wheat%20with%20boiling%20water%20and%20let%20sit%20for%20about%20an%20hour%20soaking.%20Squeeze%20as%20much%20water%20out%20of%20it%20as%20you%20can%20and%20then%20put%20it%20into%20a%20clean%20bowl.%20Add%20the%20meat%20and%20seasonings.%20Knead%20and%20mix%20together%20for%20about%2010%20minutes.%3C/p%3E%3Cp%3EHeat%20the%20olive%20oil%20in%20a%20large%20skillet.%20Add%20the%20onions%20and%20pine%20nuts.%20Cook%20and%20stir%20over%20medium%20low%20heat%20until%20golden%20brown.%20Remove%20from%20the%20heat.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20200*C/400*F.%3C/p%3E%3Cp%3EDivide%20the%20meat%20mixture%20in%20half.%20Press%20half%20of%20it%20into%20a%20buttered%208%20inch%20square%20baking%20dish.%20Top%20with%20the%20onion/pinenut%20mixture,%20spreading%20it%20evenly%20over%20top.%20Spread%20the%20remaining%20meat%20over%20top,%20pressing%20it%20down%20evenly%20and%20smoothing%20it%20out.%20Run%20a%20spatula%20around%20the%20edges%20to%20form%20a%20bit%20of%20a%20gap%20between%20the%20meat%20and%20the%20edges.%20Dip%20the%20spatula%20in%20cold%20water%20and%20start%20making%20cuts%20lengthwise%20in%20the%20meat,%20evenly%20spaced%20about%20an%20inch%20apart.%20Go%20back%20over%20it%20crosswise,%20cutting%20it%20into%20diamond%20shaped%20pieces.%20Brush%20the%20melted%20butter%20evenly%20over%20top.%3C/p%3E%3Cp%3EBake%20the%20kibbee%20in%20the%20heated%20oven%20for%2030%20to%2035%20minutes%20until%20browned%20and%20cooked%20through.%20Remove%20from%20the%20oven,%20and%20separate%20into%20diamonds.%20Serve%20with%20sour%20cream%20if%20desired.%3C/p%3E){kind=link}
