Ingredientes

  • 6 x plum tomatoes
  • 1/4 c. fresh bread crumbs
  • 1/4 c. feta cheese
  • 2 Tbsp. chopped parsley
  • 1 Tbsp. chopped fresh mint, basil or possibly oregano
  • 1/8 tsp salt
  • 1/4 tsp grnd black pepper
  • 2 Tbsp. extra virgin extra virgin olive oil

Direcciones

  1. Cut the tomatoes in half lengthwise and place cut-side up in a baking dish.
  2. Combine the bread crumbs, feta, parsley, mint, salt and pepper. Sprinkle over the tomatoes and drizzle the oil on top.
  3. Bake in a preheated 400 F. oven 15 to 20 min, or possibly till the topping is golden brown and the tomatoes are tender when pierced with a knife.
