%20and%20when%20I'm%20in%20need%20of%20a%20recipe%20to%20brighten%20a%20less%20than%20stellar%20day%20for%20her,%20I%20usually%20turn%20to%20banana.%3C/p%3E%3Cp%3ELiv's%201st%20bday%20-%20while%20this%20isn't%20banana,%20the%20smile%20is%20the%20same!%3C/p%3E%3Cp%3EWith%20banana%20being%20a%20favorite%20for%20our%20whole%20family,%20our%20bananas%20only%20rarely%20get%20to%20the%20not-so-pretty,%20brown/mushy%20stage.%20%20However%20on%20occasion%20I%20do%20misjudge%20and%20am%20left%20with%20a%20bowl%20full%20of%20mushy%20bananas%20and%20a%20family%20exclaiming%20that%20no%20one%20would%20eat%20or%20touch%20%22those%20yucky%20things%22.%20%20Little%20do%20they%20know%20that%20those%20not%20so%20pretty,%20over-ripe%20fruits%20are%20the%20secret%20to%20exceptionally%20tasty%20breads,%20cakes,%20pancakes%20and%20even%20waffles.%3C/p%3E%3Cp%3EUsually%20I%20try%20to%20whip%20something%20up%20when%20the%20fruits%20are%20ripe,%20but%20a%20few%20weeks%20ago%20time%20was%20short%20I%20simply%20stuck%20the%20over-ripe%20bunch%20into%20the%20freezer%20for%20a%20later%20use.%20%20At%20the%20time%20I%20had%20not%20idea%20how%20handy%20those%20frozen%20bananas%20would%20become.%20%20We've%20dropped%20frozen%20chunks%20into%20our%20dairy-free%20Blueberry%20Banana%20Smoothies,%20thawed%20(not%20a%20pretty%20process...)%20and%20mashed%20them%20into%20Whole%20Wheat%20Banana%20Pancakes%20(with%20a%20warm%20maple%20glaze,%20no%20less!),%20and%20yesterday%20they%20ended%20up%20mixed%20with%20my%20favorite%20flour,%20spelt,%20in%20a%20moist%20and%20flavorful%20Banana%20Bread%20with%20Spelt,%20Walnuts%20and%20Flaxseed.%3C/p%3E%3Cp%3EPicking%20Liv%20up%20at%20dance%20after%20she%20had%20been%20away%20from%20home%20for%20nearly%2014%20hours%20she%20had%20the%20tell%20tale%20signs%20of%20a%20really,%20really%20tired%20kid.%20%205%201/2%20hours%20of%20dance%20rehearsals%20after%20a%20full%20day%20of%20school%20had%20taken%20its%20toll,%20however%20a%20napkin%20filled%20with%20a%20few%20slices%20of%20the%20still%20warm%20from%20the%20oven%20bread%20seemed%20to%20furnish%20her%20little%20body%20with%20some%20much%20needed%20life%20soon%20after%20the%20first%20bite.%3C/p%3E%3Cp%3ETopped%20with%20a%20sprinkle%20of%20raw%20sugar%20the%20crust%20brought%20a%20slight%20crunch%20that%20immediately%20pleased%20her%20while%20the%20rest%20of%20the%20low%20fat%20recipe%20filled%20with%20potassium%20rich%20bananas,%20Vitamin%20E%20spiked%20walnuts,%20and%20Omega-3%20filled%20flaxseed%20pleased%20me.%20%20Whole%20wheat%20and%20spelt%20flours%20provide%20whole%20grains%20and%20the%20bread%20bakes%20up%20moist,%20with%20a%20nice%20crumb%20-%20the%20banana%20flavor%20deepening%20upon%20cooling,%20making%20it%20perhaps%20even%20better%20yet%20the%20next%20day%20in%20the%20lunch%20box.%3C/p%3E%3Cp%3EBanana%20Bread%20with%20Spelt,%20Walnuts%20and%20Flaxseed%3C/p%3E%3Cp%3Eadapted%20from%20Power%20Foods%20from%20the%20Editors%20of%20Whole%20Living%20Magazine,%20pg.%2078%3C/p%3E%3Cp%3EI%20picked%20up%20a%20copy%20of%20Power%20Foods%20last%20year%20at%20Costco%20and%20the%20book%20quickly%20rose%20to%20one%20of%20my%20favorite,%20useful%20cookbooks.%20%20Packed%20with%20photos,%20fresh%20recipes%20and%20ingredient%20ideas,%20%20Power%20Foods%20is%20worthy%20of%20your%20bookshelf.%3C/p%3E%3Cp%3ELove%20the%20raw%20sugar%20sprinkled%20on%20top!Preheat%20oven%20to%20350%C2%BAF.%20%20Spray%20a%209x5x3%20inch%20loaf%20pan%20with%20cooking%20spray.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20flours,%20flaxseed,%20salt,%20baking%20powder%20and%20baking%20soda.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20whisk%20together%20the%20egg%20and%20egg%20white%20until%20thoroughly%20combined.%20%20Add%20the%20melted%20butter,%20sugar%20and%20vanilla,%20then%20whisk%20well%20to%20combine.%20(Alternatively,%20use%20a%20hand%20mixer)%20%20Mash%20the%20bananas%20well%20and%20add%20to%20the%20bowl.%20%20Whisk%20until%20combined.%3C/p%3E%3Cp%3EAdd%20the%20dry%20ingredients%20to%20the%20wet%20ingredients%20along%20with%20the%20walnuts%20and%20stir%20with%20a%20wooden%20spoon%20just%20until%20combined,%20taking%20care%20not%20to%20over%20mix.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20prepared%20pan%20and%20top%20with%20a%20sprinkling%20of%20raw%20sugar.%20%20Bake%20until%20golden%20brown%20and%20a%20tester%20inserted%20into%20the%20center%20comes%20out%20clean,%2030-35%20minutes.%20%20Let%20cool%20slightly%20in%20the%20pan%20on%20a%20wire%20rack%20before%20turning%20out%20onto%20a%20rack%20to%20cool%20completely.%20%20The%20bread%20can%20be%20wrapped%20tightly%20in%20plastic%20and%20kept%20at%20room%20temperature%20and%20is%20best%20within%20the%20first%203%20days.%3C/p%3E%3Cp%3ENote:%20%20The%20banana%20flavor%20will%20increase%20as%20the%20bread%20cools!%3C/p%3E){kind=link}
