Ingredientes

  • 1 1/2 c. flour
  • 3 teaspoon baking pwdr
  • 1/3 c. sugar
  • 1/2 c. corn flake crumbs
  • 1/3 c. nuts
  • 1 egg
  • 1/4 c. vegetable oil
  • 1/4 c. lowfat milk
  • 1 c. mashed bananas
  • 1 teaspoon vanilla

  1. Note: For healthier muffins, I substitute: 1/4 cup oat flakes (rolled oats), 1/4 cup wheat flakes, 1/4 cup bran flakes, 1/4 cup wheat germ and 1/2 cup flour in place of the 1 1/2 cups flour called for in the original recipe. You may also use less oil (1-2 tbsp) and it still works.Put together flour, baking pwdr, sugar and corn flake crumbs in a bowl. Stir in nuts. In a separate bowl, put together large eggs, oil, lowfat milk, mashed bananas and vanilla. Add in to dry ingredients. Stir to moisten. Spray muffin pan with Pam or possibly use papers. Spoon in batter. Fill about 1/2 to 2/3 full. Bake at 400 degrees F. 16 to 18 min. Makes 1 dozen.
