Ingredientes

  • 1/2 c. shortening
  • 1 1/2 c. sugar
  • 2 x Large eggs
  • 2/3 c. ripe bananas, mashed
  • 1 tsp lemon juice
  • 1 3/4 c. cake flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 c. buttermilk
  • 1 tsp vanilla
  • 1/3 c. frosting
  • 1 x banana, mashed
  • 1/3 c. minced pecans
  • 1/2 c. shortening
  • 1 stk margarine
  • 2/3 c. lowfat milk, scalded
  • 1 c. powdered sugar
  • 1 tsp vanilla Banana slices, dipped in lemon juice, as needed

Direcciones

  1. Cream shortening and sugar till fluffy. Add in Large eggs, one at a time, creaming thoroughly. Combine banana and lemon juice set aside. Sift flour, baking soda and salt 4 times. Add in banana mix, flour mix, and buttermilk alternately to creamed mix. Mix till entire batter is light and fluffy. Add in vanilla and mix again.
  2. Pour batter into two 8-inch pans, that have been greased, papered with wax paper and floured. Bake at 350 degrees or possibly 30-35 min. Cold completely on a wire rack before frosting.
  3. FILLING:Mix and spread between layers.
  4. FROSTING:Cream shortening and butter till fluffy. Add in sugar and lowfat milk alternately to shortening mix, one Tbsp. at a time. Make sure sugar is dissolved after each addition. Add in vanilla. Mix till frosting is fluffy like whipped cream. Ice cake and garnish with banana slices.
