Receta Banana Nut Layer Cake

Ingredientes
- 1/2 c. shortening
- 1 1/2 c. sugar
- 2 x Large eggs
- 2/3 c. ripe bananas, mashed
- 1 tsp lemon juice
- 1 3/4 c. cake flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 c. buttermilk
- 1 tsp vanilla
- 1/3 c. frosting
- 1 x banana, mashed
- 1/3 c. minced pecans
- 1/2 c. shortening
- 1 stk margarine
- 2/3 c. lowfat milk, scalded
- 1 c. powdered sugar
- 1 tsp vanilla Banana slices, dipped in lemon juice, as needed
Direcciones
- Cream shortening and sugar till fluffy. Add in Large eggs, one at a time, creaming thoroughly. Combine banana and lemon juice set aside. Sift flour, baking soda and salt 4 times. Add in banana mix, flour mix, and buttermilk alternately to creamed mix. Mix till entire batter is light and fluffy. Add in vanilla and mix again.
- Pour batter into two 8-inch pans, that have been greased, papered with wax paper and floured. Bake at 350 degrees or possibly 30-35 min. Cold completely on a wire rack before frosting.
- FILLING:Mix and spread between layers.
- FROSTING:Cream shortening and butter till fluffy. Add in sugar and lowfat milk alternately to shortening mix, one Tbsp. at a time. Make sure sugar is dissolved after each addition. Add in vanilla. Mix till frosting is fluffy like whipped cream. Ice cake and garnish with banana slices.
