Ingredientes

  • Cake
  • 2 cups all-purpose flour
  • 1 cup uncooked oatmeal
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup shortening
  • 1-1/4 cups sugar
  • 2 eggs
  • 1-1/2 cups mashed ripe bananas (the riper the better)
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • Topping
  • 1/4 cup (1/2 stick) butter
  • 3/4 cup lightly packed brown sugar
  • 1/3 cup evaporated milk or 1/3 heavy cream plus a little milk to thin
  • 1-1/2 cups flaked coconut
  • 3/4 cup chopped pecans

Direcciones

  1. Preheat oven to 350°F. Grease a 9x13-inch pan.
  2. Cake
  3. Combine the flour, oatmeal, baking powder, baking soda, salt and nutmeg. Mix well and set aside.
  4. At medium speed of an electric mixer, cream together the shortening and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition.
  5. At low speed, add the flour mixture alternately with the buttermilk and mashed bananas, beginning and ending with the flour mixture. Beat only until ingredients are blended; do not overbeat. Stir in the vanilla extract.
  6. Spread evenly in the prepared pan, and bake for 35 to 40 minutes or until a cake tester comes out clean.
  7. Allow cake to cool for 10 minutes.
  8. Broiled Topping
  9. Combine all topping ingredients. Spread on warm cake. Broil until bubbly and starting to brown.
