Receta Banana Oatmeal Cake with Broiled Topping
Outstanding banana oatmeal cake with a topping of coconut, pecans and brown sugar
Ingredientes
- Cake
- 2 cups all-purpose flour
- 1 cup uncooked oatmeal
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/2 cup shortening
- 1-1/4 cups sugar
- 2 eggs
- 1-1/2 cups mashed ripe bananas (the riper the better)
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- Topping
- 1/4 cup (1/2 stick) butter
- 3/4 cup lightly packed brown sugar
- 1/3 cup evaporated milk or 1/3 heavy cream plus a little milk to thin
- 1-1/2 cups flaked coconut
- 3/4 cup chopped pecans
Direcciones
- Preheat oven to 350°F. Grease a 9x13-inch pan.
- Cake
- Combine the flour, oatmeal, baking powder, baking soda, salt and nutmeg. Mix well and set aside.
- At medium speed of an electric mixer, cream together the shortening and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition.
- At low speed, add the flour mixture alternately with the buttermilk and mashed bananas, beginning and ending with the flour mixture. Beat only until ingredients are blended; do not overbeat. Stir in the vanilla extract.
- Spread evenly in the prepared pan, and bake for 35 to 40 minutes or until a cake tester comes out clean.
- Allow cake to cool for 10 minutes.
- Broiled Topping
- Combine all topping ingredients. Spread on warm cake. Broil until bubbly and starting to brown.
