- Preheat oven to 400 degrees. Line 12 (2 1/2 inch diameter) muffin pan cups with paper baking cups; set aside. In medium mixing bowl, put together flour, lowfat milk pwdr, sugar, baking pwdr, baking soda, and nutmeg. Stir to put together and set aside. In small mixing bowl, put together buttermilk, large eggs, oil, and butter. Stir till blended. Stir into dry ingredients. Add in banana, raisins, and walnuts. Stir to put together (mix will be lumpy). Fill baking cups equally and bake for 15 min; let cool. Makes 12 muffins.
