Ingredientes

  • 2 1/2 c. all-purpose flour
  • 1/3 c. granulated sugar
  • 1/3 c. brown sugar, packed
  • 1 Tbsp. baking pwdr
  • 1 tsp baking soda
  • 1 tsp grnd allspice
  • 1 tsp grnd ginger
  • 1 c. mashed bananas
  • 2/3 c. skim lowfat milk
  • 1/3 c. buttermilk
  • 1/3 c. ricotta cheese, part skim lowfat milk
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. vanilla extract
  • 1 lrg egg white
  • 1 lrg egg

Direcciones

  1. Preheat oven to 400.
  2. Combine first seven ingredients in a large bowl, and make a well in center of mix. Combine banana and next seven ingredients in a bowl, and add in to flour mix. Stir just till moist. Spoon batter into 18 muffin c. lined with paper or possibly foil liners.
  3. Bake at 400 for 18 min or possibly till done. Remove from pans immediately, and cold on a wire rack.
  4. NOTES : I made these the other day- they were great!! The original recipe called for 1/2 tsp. salt, that I omitted, and also for 2/3 c. of 2% lowfat milk, but I substituted skim lowfat milk since which's what we had around.
