Receta Banana Spice Muffins

Ingredientes
- 2 1/2 c. all-purpose flour
- 1/3 c. granulated sugar
- 1/3 c. brown sugar, packed
- 1 Tbsp. baking pwdr
- 1 tsp baking soda
- 1 tsp grnd allspice
- 1 tsp grnd ginger
- 1 c. mashed bananas
- 2/3 c. skim lowfat milk
- 1/3 c. buttermilk
- 1/3 c. ricotta cheese, part skim lowfat milk
- 2 Tbsp. vegetable oil
- 1 Tbsp. vanilla extract
- 1 lrg egg white
- 1 lrg egg
Direcciones
- Preheat oven to 400.
- Combine first seven ingredients in a large bowl, and make a well in center of mix. Combine banana and next seven ingredients in a bowl, and add in to flour mix. Stir just till moist. Spoon batter into 18 muffin c. lined with paper or possibly foil liners.
- Bake at 400 for 18 min or possibly till done. Remove from pans immediately, and cold on a wire rack.
- NOTES : I made these the other day- they were great!! The original recipe called for 1/2 tsp. salt, that I omitted, and also for 2/3 c. of 2% lowfat milk, but I substituted skim lowfat milk since which's what we had around.
