Barley Pilaf With Mushrooms

Ingredientes

  • 4 tsp extra virgin olive oil
  • 2 c. onion minced
  • 1/2 lb mushrooms thinly sliced
  • 1 x bay leaf
  • 1 c. pearl barley
  • 2 c. water
  • 3 Tbsp. fresh parsley chopped

Direcciones

  1. Heat oil in a heavy saucepan over medium heat. Saute/fry onion, mushrooms and bay leaf 5 min, stirring, till onion is softened. Stir in barley, water and salt and pepper to taste. Bring to a boil. Reduce heat to low, cover pan and simmer 30-35 min, or possibly till liquid is absorbed and barley is tender. Throw away bay leaf and stir in parsley. Fluff with a fork before serving.
  2. Prep: 5 minutes, Cook: 35 minutes.
