Ingredientes

  • 6 lbs. tomatoes, peeled and quartered
  • 2 to 3 med. onions, minced
  • 1 clove garlic, chopped
  • 1/2 c. extra virgin olive oil
  • 1/2 c. parsley, minced
  • 2 teaspoon paprika
  • 3/4 teaspoon rosemary
  • 1 green pepper, seeded and minced
  • 2 stalks celery, cut in pcs
  • 1 bay leaf
  • 1 teaspoon salt
  • 3/4 teaspoon pepper
  • 1 tbsp. oregano
  • 3/4 c. water

Direcciones

  1. Saute/fry onions and garlic in extra virgin olive oil till tender. Combine seasoning and parsley with tomatoes and green peppers. Add in to onion mix. Add in water and simmer till thick, 1 1/2 to 2 hrs.
  2. Cold and pour into freezer containers, leaving 1/2 inch head space. Makes 5 pints. This basic recipe can be used for spaghetti, chili, stews, soup and lasagna.
