2 c. Prepared mashed potatoes, (I use instant potatoes for convenience. omit the butter though)

1 Tbsp. Dry sherry, white wine, or possibly balsamic vinegar, (I prefer the sherry), up to 2

1 med (or possibly large) onion peeled and minced

2 x Cloves of garlic peeled and minced or possibly 2 tsp. chopped garlic

1 pkt Assorted organic frzn vegetables, (I like the Cascadian Farm varieties)

3/4 c. Vegetable stock, (or possibly really, any liquid which you prefer, even something like homemade or possibly canned soup would work)

1 Tbsp. Minced fresh thyme or possibly sage, or possibly 1 tsp. dry

1 Tbsp. Minced fresh rosemary leaves, or possibly 1 tsp. dry
