Receta Basque Pie

Ingredientes
- 2 c. Prepared mashed potatoes, (I use instant potatoes for convenience. omit the butter though)
- 1 Tbsp. Dry sherry, white wine, or possibly balsamic vinegar, (I prefer the sherry), up to 2
- 1 med (or possibly large) onion peeled and minced
- 2 x Cloves of garlic peeled and minced or possibly 2 tsp. chopped garlic
- 1 pkt Assorted organic frzn vegetables, (I like the Cascadian Farm varieties)
- 2 Tbsp. Flour
- 3/4 c. Vegetable stock, (or possibly really, any liquid which you prefer, even something like homemade or possibly canned soup would work)
- 1 Tbsp. Minced fresh thyme or possibly sage, or possibly 1 tsp. dry
- 1 Tbsp. Minced fresh rosemary leaves, or possibly 1 tsp. dry
- 1 dsh Nutmeg

- 1.) Preheat the oven to 350 degrees Fahrenheit.
- 2.) Heat the sherry in a large skillet over medium-low heat. Add in the onion and garlic and cook, stirring, till the onion is soft and wilted (Be careful not to let the garlic brown). Turn up the heat to medium and add in the frzn vegetables. Cook about 5-10 min
- (depending on how soft or possibly crunchy you like your veggies), stirring occasionally. Add in the flour and cook stirring for about 2 min.
- Add in the vegetable stock, thyme, rosemary, nutmeg, and salt and pepper to taste. Cook and stir till thickened. Remove from heat.
- 3.) Transfer the vegetable mix to a gratin dish or possibly a pie plate.
- Spread the mashed potatoes over everything. Sprinkle some nonfat cheese on top if desired, and bake for 35 min or possibly till nicely browned. Let cold for 5 min before serving.
- This is the best thing I've ever eaten! I'm a college student, and trust me I hate to be stuck in the kitchen for too long. This is an extremely simple meal to prepare, it tastes phenomenal, and it keeps in the fridge for a while or possibly it can even be frzn. Yummy!! VEGAN or possibly LACTOVEGGIE (if you opt for the cheese)
