Ingredientes

  • 1 lg. onion, diced
  • 1 green pepper, diced
  • 1 clove garlic, finely minced
  • 1/4 c. extra virgin olive oil
  • 1 (16 ounce) can Italian tomatoes, liquid removed, cut into bite-size pcs
  • Black pepper to taste
  • 1 T butter
  • 1 pound bay scallops
  • 1/2 c. dry white wine
  • 1 T lemon juice
  • Italian bread crumbs

Direcciones

  1. Saute onion, green pepper and garlic in extra virgin olive oil till onion is soft and translucent/soft. Add in tomatoes and black pepper; simmer for 12 to 15 min. Pour into lightly greased baking dish and set aside.Saute scallops in butter, stirring often. Add in wine and lemon juice; simmer for 5 to 8 min. Put together scallops and reserved ingredients in the baking dish, mixing well. Sprinkle Italian bread crumbs (sufficient to cover) on top.
  2. Bake at 375 degrees till bubbly. Serve over hot brown or possibly white rice. Good with a crisp green salad, warm Italian bread, and white wine. Makes 4 servings.
