.%20But%20I%20know%20I'm%20adapting%20to%20motherhood%20when%20I%20get%20that%20urge%20to%20make%20a%20fab%20dinner,%20to%20pick%20recipes%20that%20take%20up%20a%20full%20page%20or%20maybe%20even%20two,%20have%20unusual%20ingredients%20or%20techniques,%20and%20look%20darn%20good%20on%20a%20plate.%20Enter%20Laurent.%20For%20my%20birthday%20in%20December,%20my%20mother-in-law%20sent%20me%20a%20copy%20of%20Fresh%20from%20the%20Market.%20I've%20drooled%20over%20it%20numerous%20times,%20and%20I%20finally%20got%20around%20to%20making%20a%20meal%20from%20it.%3C/p%3E%3Cp%3EThe%20first%20course%20is%20featured%20below.%20I%20am%20personally%20not%20a%20scallop%20fan.%20But%20every%20now%20and%20again%20I'll%20make%20a%20first%20course%20with%20them%20because%20my%20husband%20loves%20them.%20This%20recipe%20calls%20for%20bay%20scallops%20which%20I%20find%20more%20palatable%20than%20the%20big%20guys.%20I%20was%20intrigued%20by%20smoked%20potatoes%20(amazing!)%20and%20McIntosh%20happen%20to%20be%20my%20favorite%20apples.%20This%20is%20one%20great%20first%20course.%20It's%20got%20lots%20of%20different%20textures%20-%20creamy%20potato%20salad,%20crisp%20greens,%20crunchy%20apples%20and%20bacon%20and%20lush%20scallops.%20Jeff%20put%20it%20in%20his%20top%20five%20first%20courses%20(his%20long-standing%20favorite%20is%20also%20from%20Laurent...)%3C/p%3E%3Cp%3EWatch%20for%20the%20main%20course:%20a%20veal%20chop%20with%20black%20trumpet%20ragu%20and%20crispy%20artichokes...%20mmmm.%3C/p%3E%3Cp%3EIf%20you're%20in%20the%20market%20for%20a%20new%20cookbook%20(and%20who%20isn't%20really???)%20check%20this%20one%20out.%20Not%20that%20I'm%20partial%20or%20anything.%3C/p%3E%3Cp%3ENantucket%20Bay%20Scallops%20with%20Smoked%20Fingerling%20Potato%20Salad,%20Endive,%20&%20McIntosh%20Apple%3C/p%3E%3Cp%3Eadapted%20from%20Fresh%20from%20the%20Market%20by%20Laurent%20Tourondel%3C/p%3E%3Cp%3ESERVES%206%3C/p%3E%3Cp%3ECook%20the%20bacon%20in%20a%20small%20saut%C3%A9%20pan%20over%20medium%20heat%20until%20crispy,%20about%205%20minutes.%20Drain%20on%20a%20plate%20lined%20with%20paper%20towels.%20Once%20cool,%20roughly%20chop%20the%20bacon.%3C/p%3E%3Cp%3EPlace%20the%20potatoes%20in%20a%20large%20pot%20and%20cover%20them%20with%20cold%20water.%20Bring%20the%20water%20to%20a%20boil%20over%20high%20heat%20and%20salt%20liberally%20with%20kosher%20salt.%20Reduce%20the%20heat%20to%20a%20simmer%20and%20cook%20until%20the%20potatoes%20are%20tender,%20about%2018%20minutes.%20Drain%20the%20potatoes.%20When%20they%20are%20cool%20enough%20to%20handle,%20peel%20off%20the%20skins.%3C/p%3E%3Cp%3ELine%20the%20bottom%20of%20a%20pot%20with%20heavy-duty%20aluminum%20foil.%20Drain%20the%20hickory%20wood%20chips%20and%20place%20them%20in%20the%20pot.%20Heat%20the%20wood%20chips%20over%20a%20burner%20until%20they%20are%20smoking.%20Place%20the%20potatoes%20in%20a%20steamer%20insert%20and%20set%20the%20insert%20in%20the%20pot.%20Cover%20tightly%20with%20a%20lid,%20allowing%20no%20smoke%20to%20escape%20from%20the%20pot.%20Smoke%20the%20potatoes%20over%20medium%20heat%20for%20about%205%20minutes.%20Alternatively,%20smoke%20them%20for%205%20minutes%20in%20a%20stovetop%20smoker.%3C/p%3E%3Cp%3EWhisk%20the%20mayonnaise,%20barbecue%20sauce,%20mustard%20or%20grapeseed%20oil,%20and%20sherry%20vinegar%20in%20a%20large%20bowl%20to%20blend.%3C/p%3E%3Cp%3EAdd%20half%20the%20warm%20potatoes%20to%20the%20dressing%20and,%20using%20a%20fork,%20crush%20the%20potatoes%20into%20the%20vinaigrette.%20Cut%20remaining%20potatoes%20into%20quarters%20and%20then%20fold%20them%20in.%3C/p%3E%3Cp%3EFold%20in%20the%20chopped%20bacon,%20parsley,%20celery,%20and%20onion,%20and%20season%20to%20taste%20with%20sea%20salt%20and%20pepper.%20Let%20the%20salad%20stand%20for%2020%20minutes%20to%20allow%20all%20the%20%EF%AC%82avors%20to%20incorporate,%20stirring%20occasionally.%3C/p%3E%3Cp%3EPrepare%20the%20scallops%3C/p%3E%3Cp%3EHeat%20the%20canola%20oil%20in%20a%20large%20saut%C3%A9%20pan%20over%20medium-high%20heat.%20Season%20the%20scallops%20with%20salt%20and%20pepper.%20When%20the%20pan%20is%20smoking%20hot,%20add%20the%20scallops.%20Sear%20the%20scallops%20on%201%20side%20until%20caramelized,%20about%202%20minutes.%20Once%20the%20scallops%20have%20caramelized,%20swirl%20the%20pan%20several%20times%20and%20continue%20to%20cook%20for%202%20more%20minutes.%20Transfer%20the%20scallops%20to%20a%20plate%20lined%20with%20paper%20towels%20to%20absorb%20any%20excess%20moisture.%3C/p%3E%3Cp%3EAssemble%20the%20salad%3C/p%3E%3Cp%3EWhisk%20the%20olive%20oil,%20lemon%20juice,%20and%20garlic%20in%20a%20medium%20bowl%20to%20blend.%20Season%20to%20taste%20with%20salt%20and%20pepper.%20Toss%20the%20endive,%20apple,%20and%20watercress%20in%20the%20vinaigrette%20to%20coat.%3C/p%3E%3Cp%3ETo%20serve%3C/p%3E%3Cp%3ESpoon%20the%20potato%20salad%20in%20the%20center%20of%206%20plates.%20Place%20the%20scallops%20over%20the%20potato%20salad%20and%20then%20top%20with%20the%20watercress%20salad.%20Serve%20immediately.%3C/p%3E){kind=
