Bean & Bacon Soup

Ingredientes

  • 1 pound navy beans
  • 6 c. water
  • 2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic, chopped
  • 1 bay leaf
  • 4 slices bacon
  • 2 med. onions, minced
  • 1 sm. green pepper, minced
  • 1/2 c. carrots
  • 1 (8 ounce.) can tomato sauce

Direcciones

  1. Sort and wash beans. Soak overnight. Drain and rinse. Cover with water in large pot. Add in salt, pepper, garlic and bay leaf. Cook bacon till crisp. Remove from skillet and drain on paper towel. Add in onions and green pepper to drippings. Saute/fry till tender. Add in onions, peppers and carrots to beans and water. Bring to boil and simmer for 1 hour. Add in tomato sauce. Cover and simmer 30 min or possibly till tender. Ladle into serving bowls and garnish with crumbled bacon.
