Bean Curd Salad With Peanuts

Ingredientes

  • 4 sqr fresh tofu [about 1 lb.]
  • 1 tsp fresh ginger root chopped
  • 3 Tbsp. scallions minced
  • 3 Tbsp. coriander leaves minced
  • 2 Tbsp. sesame oil
  • 1 dsh Tabasco sauce
  • 1 Tbsp. dry sherry
  • 1 Tbsp. low sodium soy sauce
  • 1/2 tsp sugar
  • 3 Tbsp. peanuts, dry-roasted

Direcciones

  1. Cut tofu into 1/4-inch cubes and place in a medium bowl.
  2. Sprinkle remaining ingredients except peanuts over the tofu. With your fingers toss lightly to blend.
  3. Mound the salad on plates with lettuce, tomato, and cucumber. Sprinkle with peanuts for garnish.
  4. NOTE:More coriander, scallions, and/or possibly minced parsley can be added to the salad or possibly as a garnish.
