,%20it%20needed%20using%20up%20and%20what%20better%20than%20a%20winter%20warming%20stew!%20Even%20more%20considering%20the%20ghastly%20weather%20of%20late%20-%20I%20hope%20that%20everyone%20is%20keeping%20well%20and%20warm!%20This%20is%20also%20'the%20beef'%20that%20should%20have%20been%20intended%20for%20an%20ill%20fated%20beef%20bourginnon%20the%20previous%20week!%3C/p%3E%3Cp%3EWhilst%20I%20had%20heard%20of%20brisket,%20it%20wasn't%20really%20something%20that%20I%20was%20familiar%20with%20cooking,%20even%20less%20so%20handling%20a%20huge%20slab%20of%20beef%20but%20with%20a%20sharp%20knife%20it%20was%20quickly%20reduced%20to%20more%20familiar%20chunks!%20Nothing%20fancy%20went%20into%20the%20stew,%20however%20the%20beef%20was%20such%20good%20quality%20it%20really%20didn%E2%80%99t%20need%20any%20lights%20or%20bells%20on%20to%20take%20it%20to%20new%20heights!%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E2)%20Remove%20any%20remaining%20beef%20from%20the%20pan%20to%20one%20side,%20add%20the%20remaining%20oil%20and%20brown%20the%20onion,%20stir%20in%20the%20flour,%20stock%20pot,%20then%20gently%20add%20the%20water%20stirring%20briskly%20and%20scraping%20off%20any%20stuck%20on%20bits,%20return%20the%20beef,%20cover%20and%20simmer%20on%20low%20for%20a%20good%20hour.%3C/p%3E%3Cp%3E3)%20Add%20the%20carrots%20and%20celery,%20stir%20and%20cover%20and%20allow%20to%20gently%20plod%20away%20for%20a%20good%202%20to%203%20hours,%20giving%20the%20cursory%20stir%20when%20the%20lovely%20smells%20draw%20you%20into%20its%20path.%20Remove%20the%20lid%20for%20the%20last%20half%20hour%20to%20allow%20the%20sauce%20to%20thicken%20if%20desired.%3C/p%3E%3Cp%3E4)%20To%20finish%20the%20dish,%20I%20used%20up%20some%20cute%20little%20onions%20that%20also%20came%20in%20my%20Knorr%20hamper,%20though%20totally%20optional!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E200g%20Baby%20onions%3C/p%3E%3Cp%3E3tbsp%20port%3C/p%3E%3Cp%3E100g%20white%20mushrooms.%20Sliced%20into%204%3C/p%3E%3Cp%3E1)%20Cover%20the%20onions%20in%20boiling%20water%20and%20sit%20for%20a%20few%20minutes,%20fish%20them%20out%20carefully,%20top%20and%20tail%20and%20peel%20%E2%80%93%20most%20of%20the%20skins%20should%20rub%20off.%20Reserve%20the%20soaking%20water.%3C/p%3E%3Cp%3E2)%20Heat%20roughly%20100ml%20of%20the%20onion%20water%20with%203%20tbsp%20of%20port,%20add%20the%20halved%20onions%20and%20gently%20boil%20for%20around%20five%20minutes%20or%20until%20just%20softeneing,%20add%20the%20mushrooms%20and%20a%20splash%20more%20of%20the%20water%20if%20drying%20out,%20repeat%20for%20about%2015%20minutes%20or%20until%20the%20onions%20are%20cooked%20but%20retain%20a%20little%20bite.%20Use%20these%20to%20garnish%20your%20stew%3C/p%3E%3Cp%3EFinish)%20Once%20the%20stew%20is%20at%20the%20desired%20thickness,%20and%20tenderness%20top%20with%20the%20onion%20mix,%20and%20serve%20with%20fresh%20green%20vegetables%20I.e.%20broccoli%20and%20maybe%20a%20nice%20potato%20dish.%20After%20my%20success%20with%20the%20other%20potatoes,%20I%20picked%20up%20a%20small%20bag%20of%20a%20variety%20called%20Corrole,%20though%20this%20time%20instead%20I%20boiled%20them,%20drained,%20added%20butter,%20fresh%20parsley%20and%20lemon%20juice%20(from%20a%20bottle),%20s&p%20to%20the%20same%20success,%20albeit%20minus%20the%20nice%20crispy%20bits.%20Still%20delicious.%20You%20can%E2%80%99t%20taste%20the%20lemon,%20it%20just%20adds%20a%20certain%20something%20and%20I%20will%20be%20repeatedly%20making%20potatoes%20this%20way!%3C/p%3E%3Cp%3ERe-heats%20and%20freezes%20beautifully%3C/p%3E%3Cp%3EThanks%20again%20to%20Knorr%20and%20Golin%20Harris%20for%20my%20goodies%20:)%3C/p%3E){kind=link}
