Ingredientes

  • 12lbs Lean beef, well trimmed cut into 1"
  • 2Tbsp Paprika
  • 21/2Tbsp Oil
  • 31/2 Flour
  • 11/2tsp Marioram or basil
  • 11/2tsp Thyme
  • 1/2tsp Pepper
  • 2lbs Onions, Chopped
  • 1lb Carrots, Sliced
  • 12oz Celery , diced
  • 31/2cups Water or salt-free beef broth
  • 11/2Tbsp Fresh ginger root, grated (optional)
  • 3Tbsp Garlic Minced
  • 51/2cups Burgundy Wine
  • 1/3cups salt-free soy sauce
  • 26ozs Fresh Mushrooms, sliced
  • 68ozs noodles
  • 1/2cups parsley, chopped

Direcciones

  1. Dry meat cubes well and coat with paprika
  2. In a large, heavy pot, heat oil and brown meat
  3. Mix together flour, majoram or basil, thyme, and pepper and sprikle over meat
  4. Continue to brown for 10 minutes more
  5. In another pot, cook onions, carrots, and celery in a little of the salt-free broth or water
  6. Add vegetables to the meat with ginger root (if desired), garlic, bay leaves, wine, remaining water or broth, and soy sauce
  7. Simmer for 21/2-3 hours or until beef is tender
  8. Fifteen minutes before stew is done, add sliced mushrooms (if desired)
  9. Cook noodles and drain
  10. Serve a No. 6 dipper of stew over 1 cup of noodles
  11. Garnish with parsley
