Ingredientes

  • 1 med Zucchini
  • 1/4 lb Grnd beef
  • 1 Tbsp. Minced onion
  • 1 Tbsp. Minced green pepper
  • 3 Tbsp. Tomato sauce
  • 2 Tbsp. Parmesan cheese, divided
  • 1 dsh Garlic pwdr
  • 1 dsh Salt

Direcciones

  1. Cut zucchini in half lengthwise. Scoop out pulp, leaving a 1/4 inch shell.
  2. Chop pulp and set aside. Place grnd beef, onion and green pepper in small casserole. Cover and microwave at High for 1 to 2 min, stirring once till beef is browned. Drain. Add in zucchini pulp, tomato sauce, 1 Tbsp. Parmesan cheese, garlic pwdr and salt to grnd beef mix. Place half of the beef mix in each zucchini shell. Sprinkle with remaining 1 Tbsp. Parmesan cheese. Place stuffed zucchini on a microwave roasting rack. Cover tightly with heavy duty plastic wrap. Microwave at High for 1 1/2 min. Give dish a half turn, and microwave at High for 1 1/2 to 3 1/2 min or possibly till filling is set and zucchini is fork tender.
