%20and%20I%20remember%20thinking%20about%20how%20lucky%20those%20folks%20were%20to%20be%20eating%20such%20a%20fine%20fine%20meal.%20We,%20of%20course,%20partook%20in%20quite%20a%20few%20%E2%80%9Cscraps%E2%80%9D%20and%20yeah,%20it%20was%20good%20stuff.%3C/p%3E%3Cp%3EBut%20for%20some%20reason,%20the%20idea%20of%20making%20beef%20Wellington%20this%20past%20weekend%20was%20something%20I%20couldn%E2%80%99t%20stop%20thinking%20about.%20It%20was%20the%20weekend%20of%20our%206%20year%20wedding%20anniversary%20(!),%20and%20we%E2%80%99d%20decided%20to%20stay%20home%20and%20take%20it%20easy,%20so%20a%20nice,%20decadent%20meal%20seemed%20like%20the%20right%20thing%20to%20do.%3C/p%3E%3Cp%3EChris%20and%20I%20did%20burn%20a%20few%20calories%20on%20the%20bikes,%20anyway,%20so%20we%20had%20a%20little%20extra%20room%20for%20some%20butter-laden%20dough,%20prosciutto,%20and%20of%20course,%20beef.%20We%20finished%20up%20our%20trip%20through%20Golden%20Gate%20Park,%20stopped%20off%20at%20Whole%20Foods,%20and%20loaded%20up%20on%20our%20ingredients%20as%20well%20as%20some%20cheese%20and%20crackers%20to%20tide%20us%20over%20until%20dinner.%3C/p%3E%3Cp%3EI%20decided%20we%20didn%E2%80%99t%20quite%20need%20to%20do%20an%20entire%20recipe%20of%20beef%20Wellington,%20so%20I%20made%20some%20adjustments%20to%20one%20of%20%E2%80%9CT-Flo%E2%80%99s%E2%80%9D%20recipes,%20and%20came%20up%20with%20the%20most%20ginormous%20%E2%80%9Cindividual%E2%80%9D%20portions%20I%E2%80%99d%20ever%20seen.%3C/p%3E%3Cp%3EI%E2%80%99m%20sure%20on%20most%20days%20I%20could%20have%20eaten%20it%20all%20then%20and%20there,%20but%20with%20the%20mountain%20of%20cheese%20we%20ate%20beforehand,%20this%20ended%20up%20being%20a%204-serving%20dish%20instead%20of%202.%20Which%20is%20to%20say%20that%20we%20managed%20to%20drag%20out%20the%20decadence%20for%20another%20night.%20And%20it%20was%20good,%20my%20friends,%20good%20indeed.%20Perfect%20for%20a%20special%20night%20in,%20a%20dinner%20party%20perhaps,%20or%20even%20a%20holiday%20dish%20to%20replace%20all%20of%20that%20turkey%20we%20folks%20eat%20all%20the%20dang%20time.%3C/p%3E%3Cp%3EI%20guess,%20also,%20you%20could%20make%20it%20on%20a%20regular%20ol%E2%80%99%20Tuesday%20night,%20too.%20But%20that%20just%20sounds%20crazy,%20and%20we%20are%20sane%20as%20can%20be%20over%20here.%3C/p%3E%3Cp%3E%E2%80%9CIndividual%E2%80%9D%20Beef%20Wellingtons%3C/p%3E%3Cp%3EAdapted,%20loosely,%20from%20Tyler%20Florence%20via%20The%20Food%20Network,%20serves%202-4%3C/p%3E%3Cp%3Etime%20commitment:%20less%20than%202%20hours%20from%20start%20to%20finish%3C/p%3E%3Cp%3Eingredients%3C/p%3E%3Cp%3Einstructions%3C/p%3E%3Cp%3Emake%20the%20duxelles%20and%20kale:%3C/p%3E%3Cp%3Eadd%20mushrooms,%20shallots,%20garlic,%20and%20thyme%20to%20a%20food%20processor%20and%20pulse%20until%20finely%20chopped.%20Add%20butter%20and%20olive%20oil%20to%20a%20large%20saute%20pan%20and%20set%20over%20medium%20heat.%20Add%20the%20shallot%20and%20mushroom%20mixture%20and%20saute%20for%20~6%20minutes%20until%20most%20of%20the%20liquid%20has%20evaporated.%20Season%20with%20salt%20and%20pepper%20and%20set%20aside%20to%20cool.%20add%20kale%20to%20pan%20and%20saut%C3%A9%20until%20cooked%20throughout,%20season%20with%20salt%20and%20pepper%20and%20set%20aside%20to%20cool.%3C/p%3E%3Cp%3Ebeef:%3C/p%3E%3Cp%3Edrizzle%20filets%20with%20olive%20oil,%20then%20season%20with%20salt%20and%20pepper%20and%20sear%20all%20over,%20including%20the%20ends,%20in%20a%20hot,%20heavy-based%20skillet%20lightly%20coated%20with%20olive%20oil%20%E2%80%93%20about%202%20to%203%20minutes%20total.%20Meanwhile%20set%20out%202%20slices%20of%20prosciutto%20on%20a%20sheet%20of%20plastic%20wrap%20on%20top%20of%20your%20cutting%20board.%20Layer%20the%202%20slices%20of%20prosciutto%20onto%20the%20plastic%20wrap.%20Using%20a%20rubber%20spatula%20cover%20evenly%20with%201/2%20of%20the%20duxelle%20mixture.%20Season%20the%20surface%20of%20the%20duxelles%20with%20salt%20and%20pepper%20and%20sprinkle%20with%20fresh%20thyme%20leaves.%20Add%201/2%20of%20the%20kale%20next.%20When%20the%20beef%20is%20seared,%20remove%20from%20heat,%20and%20smear%20lightly%20all%20over%20with%20Dijon%20mustard.%20Allow%20to%20cool%20slightly,%20then%20roll%20up%20in%20the%20duxelles%20covered%20prosciutto%20using%20the%20plastic%20wrap%20and%20repeat%20with%20the%20other%20filet.%20Tuck%20in%20the%20ends%20of%20the%20prosciutto%20as%20you%20roll%20to%20completely%20encompass%20the%20beef.%20Roll%20it%20up%20tightly%20in%20plastic%20wrap.%20Set%20in%20the%20refrigerator%20for%2030%20minutes%20to%20ensure%20it%20maintains%20its%20shape.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20425%20F.%3C/p%3E%3Cp%3EOn%20a%20lightly%20floured%20surface,%20roll%20the%20puff%20pastry%20out%20to%20about%20a%201/4-inch%20thickness.%20Cut%20the%20sheet%20in%20half,%20using%20each%20half%20for%20each%20filet.%20Depending%20on%20the%20size%20of%20your%20sheets%20you%20may%20have%20to%20overlap%202%20sheets%20and%20press%20them%20together.%20Remove%20beef%20from%20refrigerator%
