%20in%20Nottingham%20last%20year,%20in%20fact%20til%20I%20properly%20sorted%20out%20the%20dates%20I%20had%20a%20sneaky%20suspicion%20%E2%80%9Cthe%20bump%E2%80%9D%20might%20owe%20it%E2%80%99s%20existence%20to%20%20a%20particularly%20strong%20perry.%20%20(%20Apologies%20for%20too%20much%20information%20:%20and%20sorry%20Mum!)%3C/p%3E%3Cp%3EAt%20good%20pubs%20and%20beer%20festivals%20it%E2%80%99s%20wonderful%20to%20see%20the%20enormous%20range%20of%20British%20Beers%20and%20I%20have%20been%20reading%20a%20fascinating%20series%20of%20books%20by%20writer%20Pete%20Brown%20,%20on%20the%20impact%20of%20society%20on%20beer%20development%20and%20vice%20versa%20the%20impact%20of%20beer%20on%20society.%3C/p%3E%3Cp%3EMy%20knowledge%20of%20beers%20is%20embarassingly%20weak,%20and%20as%20a%20cook%20though%20i%20have%20long%20known%20that%20sneaking%20a%20slosh%20of%20wine%20)%20or%20otherwise%20improves%20a%20lot%20of%20dishes%20,%20looking%20through%20my%20archives%20I%20rarely%20reach%20for%20a%20beer.%20%20Pete%20Brown%20writes%20with%20such%20eloquence%20on%20the%20%20%E2%80%9Croast%20and%20caramalisation%E2%80%9D,%20%20qualties%20of%20beer%20that%20I%20really%20want%20to%20try%20some%20beer%20recipes.%3C/p%3E%3Cp%3ESince%20I%20am%20prohibited%20from%20drinking%20at%20the%20moment%20I%20have%20decided%20to%20try%20cooking%20with%20beer.%20%20This%20is%20perfectly%20healthy%20for%20the%20bump%20since%20with%20long%20cooking%20the%20alcohol%20boils%20off,%20leaving%20the%20great%20flavour%3C/p%3E%3Cp%3EFor%20the%20first%20recipe%20I%20%20have%20opted%20for%20some%20beef%20ribs,%20the%20%20butchers%20in%20Nottingham%20seem%20particularly%20keen%20on%20cheap%20cuts%20these%20stacked%20high%20next%20to%20the%20Oxtail.%20Beef%20ribs%20are%20about%2030cm%20in%20length%20and%2010cm%20thick.%20I%20usually%20get%20the%20butcher%20to%20cut%20them%20into%20three,%20instanly%20making%20them%20easy%20to%20cook%20and%20serve%3C/p%3E%3Cp%3EI%20was%20wondering%20what%20beer%20to%20choose%20out%20of%20the%20selection%20in%20our%20cupboard,%20I%20noticed%20a%20bottle%20of%20Castle%20Rock%E2%80%99s%20Harvest%20Pale%20this%20won%20Supreme%20Champion%20at%20the%202010%20Great%20British%20Beer%20Festival%20in%20London.%20%20Castle%20Rock%20is%20a%20local%20brewery,%20very%20local%20in%20fact%20the%20Nottingham%20brewery%20is%20just%2010%20minutes%20walk%20from%20my%20house.%3C/p%3E%3Cp%3ELocal%20and%20award%20winning%20seemed%20like%20a%20good%20bet%3C/p%3E%3Cp%3EFor%20slow%20cooking%20I%20didn%E2%80%99t%20%20bother%20%20browning%20the%20meat%20,%20%20instead%20opting%20to%20pop%20everything%20in%20one%20pot,%20I%20found%20as%20the%20ribs%20cook%20they%20caramelise%20with%20the%20beer%20and%20onions%20producing%20a%20delicious%20%20gravy%20(%20thickened%20if%20you%20wish%20with%20cornflour/flour)%20.%20Once%20cooked%20the%20meat%20should%20fall%20off%20the%20bone%20with%20a%20gentle%20nudge%20from%20your%20fork,%20%20perfectly%20tender%3C/p%3E%3Cp%3EServe%20with%20mashed%20potato%20or%20other%20root%20vegetables%20(%20I%20like%20to%20mix%20in%20celeriac,%20swede%20or%20parsnips)%20%20mixed%20with%20a%20blob%20of%20horseradish%20for%20extra%20heat.%3C/p%3E%3Cp%3EI%20usually%20find%20a%20third%20with%20plenty%20of%20mash%20and%20gravy%20is%20perfect%20eat%20two%20thirds%20of%20a%20beef%20rib%20and%20you%20are%20stuffed.%3C/p%3E%3Cp%3EBeer%20Braised%20Beef%20Ribs%3C/p%3E%3Cp%3EAssume%202/3%20of%20a%20rib%20per%20person.%3C/p%3E%3Cp%3EPlace%20the%20onions,%20marmite%20,%20thyme%20sprigs,%20%20English%20mustard%20,%20Black%20pepper%20and%20beer%20in%20a%20cast%20iron%20pot.%20Cover%20and%20place%20in%20a%20medium%20oven%20150degC%20for%204%20hours%20(%20or%20low%20setting%20on%20a%20slow%20cooker)%3C/p%3E%3Cp%3EFifteen%20minutes%20before%20serving%20turn%20off%20the%20heat,%20remove%20a%20ladleful%20of%20the%20juice%20and%20mix%20with%20the%20cornflour%3C/p%3E%3Cp%3EReturn%20to%20the%20pan%20stirring%20in,%20this%20will%20thicken%20the%20sauce%20to%20form%20a%20rich%20gravy.%3C/p%3E%3Cp%3EI%20would%20%20be%20really%20keen%20to%20try%20some%20beer%20%20and%20food%20matching,%20but%20with%20the%20bump%20on%20board%20,%20that%E2%80%99s%20going%20to%20need%20to%20%20be%20put%20on%20hold%20for%20a%20while.%3C/p%3E){kind=link}
