.%20Anyway,%20it%20has%20been%20a%20while%20but%20this%20week%E2%80%99s%20been%20crazy,%20as%20was%20last%20weekend.%20I%20hosted%20a%20Thanksgiving%20dinner%20yesterday%20(a%20day%20later%20but%20Thursday%20was%20a%20school%20night%20here!)%20and%20was%20cooking%20for%20about%203%20days%E2%80%A6%20Look%20out%20for%20my%20next%20post%20for%20details.%3C/p%3E%3Cp%3EWithin%20the%20madness%20however,%20I%20did%20manage%20a%20quick%20post%20on%20my%20Greek%20pages.%20Quick%20being%20the%20operative%20word!%20I%E2%80%99d%20been%20thinking%20about%20going%20to%20Food%20Blogger%20Connect%20(%23FBC5)%20in%20London%20in%20July,%20and%20I%20was%20looking%20for%20a%20blogger%20buddy%20in%20order%20to%20benefit%20from%20the%20Early%20Bird%20offer%20of%202-4-1%20(ending%20tomorrow).%20It%20suddenly%20occurred%20to%20me%20to%20buddy%20up%20with%20someone%20from%20here%20in%20Greece.%20So%20I%20asked%20the%20nice%20peeps%20over%20at%20Greek%20Food%20Blogs%20and%20they%20suggested%20I%20write%20a%20post%20which%20they%20would%20promote%20within%20the%20online%20community.%20It%20took%20but%20a%20couple%20of%20hours%20and%20hey%20presto,%20Sugar%20Flowers%20Creations%20left%20a%20comment%20and%20we%E2%80%99re%20now%20looking%20for%20cheap%20flights!%20Yay!%3C/p%3E%3Cp%3EAs%20I%20really%20needed%20to%20get%20that%20post%20up%20as%20quickly%20as%20possible,%20I%20chose%20to%20include%20one%20of%20my%20easiest%20and%20simplest%20recipes%20from%20the%20%E2%80%9Cto-blog%E2%80%9D%20list.%20The%20idea%20for%20this%20dip%20came%20from%20two%20things.%20First%20was%20a%20gorgeous%20salad%20a%20friend%20brought%20to%20a%20summer%20BBQ.%20Pieces%20of%20juicy,%20sweet%20and%20earthy%20beetroot,%20teamed%20with%20chunks%20of%20rich%20and%20creamy%20feta%20cheese.%20A%20match%20made%20in%20heaven.%20A%20few%20weeks%20later%20I%20was%20drooling%20surfing%20the%20website%20of%20another%20friend,%20who%20owns%20a%20company%20that%20imports/exports%20food%20(Elli%20&%20Manos).%20And%20I%20landed%20on%20this%20page.%20I%20knew%20I%20would%20love%20the%20beet/feta%20spread.%20So%20when%20I%20found%20myself%20with%20some%20leftover%20cooked%20beetroot%20and%20half%20a%20tub%20of%20feta%20that%20was%20begging%20to%20be%20eaten%20up,%20I%20wondered%20what%20would%20happen%20if%20I%20chucked%20them%20in%20the%20blender.%20The%20result%20was%20pretty%20amazing,%20in%20taste%20and%20in%20appearance!%20In%20my%20Greek%20post%20I%20didn%E2%80%99t%20mention%20where%20I%20got%20my%20inspiration,%20which%20was%20my%20bad,%20so%20I%E2%80%99d%20like%20to%20make%20it%20right.%20Elli%20doesn%E2%80%99t%20even%20know%20I%E2%80%99m%20writing%20this,%20so%20please%20don%E2%80%99t%20think%20it%E2%80%99s%20a%20sponsored%20post%20or%20anything.%20I%20haven%E2%80%99t%20tried%20their%20dip%20but%20how%20can%20it%20not%20work?%20It%E2%80%99s%20got%20beetroot%20and%20feta%20in%20it!%20(they%E2%80%99re%20based%20in%20Greece%20and%20the%20UK%20but%20check%20with%20them%20about%20delivery%20to%20other%20countries)%3C/p%3E%3Cp%3EHere%E2%80%99s%20my%20version%20(would%20you%20please%20look%20at%20that%20colour?%20Is%20it%20not%20the%20prettiest%20colour%20ever?)%3C/p%3E%3Cp%3EBeetroot%20and%20Feta%20Dip%3C/p%3E%3Cp%3EMakes%201%20small%20batch%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E180g%20beetroot,%20cut%20into%20chunks%20(I%20used%20the%20pre-cooked%20vacuum%20packed%20version.%20Might%20be%20even%20nicer%20with%20roast%20beetroot.%20Scrub,%20cut%20each%20into%204%20or%206%20wedges,%20toss%20in%20a%20bit%20of%20oil%20and%20roast%20for%20about%20an%20hour-90%20min%20or%20until%20you%20can%20stick%20a%20fork%20in%20it)%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EAdd%20all%20ingredients%20to%20a%20blender%20and%20pulse%20till%20smooth.%3C/p%3E%3Cp%3E(My%20shortest%20%E2%80%9CDirections%E2%80%9D%20section%20ever!)%3C/p%3E%3Cp%3EBeetroot%20borani%20recipe%20(borani%20chogondar)%20by%20Nami-Nami%3C/p%3E%3Cp%3EBeet%20Chop/Beetroot%20Patty%20by%20Sunshine%20and%20Smile%3C/p%3E%3Cp%3EBeet%20Hummus%20by%20Simply%20Recipes%3C/p%3E%3Cp%3EBeet%20and%20Sweet%20Potato%20Stacks%20by%20The%20Kitchn%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
