in%20their%20little%20shrink%20wrap%20casings%20but%20after%20about%203%20days%20worth%20of%20it%20in%20salads%20of%20some%20sort,%20the%20appeal%20can%20start%20to%20wane%20even%20for%20a%20devout%20beetroot%20fan...%3C/p%3E%3Cp%3E..There's%20been%20a%20plethora%20of%20beetroot%20and%20chocolate%20cake%20recipes%20over%20the%20net%20these%20past%20few%20years,%20and%20as%20I%20am%20huge%20fan%20of%20adding%20carrots,%20and%20indeed%20parsnips%20to%20my%20bakes;%20thought%20mostly%20why%20the%20hell%20not.%20Like%20how%20most%20of%20my%20recipes%20come%20about%20really!%3C/p%3E%3Cp%3EThe%20original%20recipe%20comes%20from%20the%20very%20delicious%20blog%20Yummy%20Choo%20Eats,%20and%20the%20lovely%20hostess%20Selina%20has%20given%20me%20kind%20permission%20to%20re-publish%20it%20here%20with%20my%20tweaks.%3C/p%3E%3Cp%3EMany%20thanks%20also%20to%20the%20ladies%20of%20twitter%20confirming%20I%20could%20swap%20maple%20syrup%20for%20golden%20-%20my%20store%20cupboard%20is%20somewhat%20shrunken%20and%20have%20no%20room%20for%20new%20bottles%20to%20gather%20dust!%20Cooking%20in%20the%20new%20oven%20is%20a%20bit%20of%20a%20trial%20and%20error%20-%20I'd%20spent%205%20years%20getting%20used%20to%20cooking%20with%20fan%20assisted%20and%20now%20back%20to%20a%20regular,%20ancient%20beast%20of%20an%20oven%20and%20was%20pleasantly%20surprised%20these%20survived%20so%20well!%3C/p%3E%3Cp%3EMakes%2012%20cookies%3C/p%3E%3Cp%3E**CSI%20style%20gloves%20are%20very%20handy%20for%20this%20recipe**%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPre-heat%20oven%20to%20Gas%20Mark%206%20/%20200%20and%20line%20a%20baking%20tray%20or%20two%20with%20parchment/%20baking%20paper.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20whisk%20together%20the%20flour,%20baking%20powder,%20salt,%20and%20oats.%20Add%20the%20grated%20beetroot,%20ginger,%20coconut%20and%20cinnamon.%3C/p%3E%3Cp%3EIn%20a%20separate%20smaller%20bowl%20use%20a%20whisk%20to%20combine%20the%20golden%20syrup%20and%20oil.%20Add%20this%20to%20the%20flour%20mixture%20and%20stir%20until%20just%20combined.%3C/p%3E%3Cp%3EUse%20your%20hands%20to%20shape%20into%20walnut%20sized%20balls%20and%20flatten%20slightly,%20place%20on%20to%20baking%20sheet,%20leaving%20about%202%20inches%20between%20each%20cookie.%3C/p%3E%3Cp%3EBake%20in%20the%20oven%20for%2015-20%20minutes%20or%20until%20cookies%20are%20golden%20brown%20on%20top%20and%20underneath.%20-%20Mine%20took%2018%20minutes.%3C/p%3E%3Cp%3EAllow%20to%20cool%20slightly%20and%20transfer%20to%20a%20cooling%20rack.%3C/p%3E%3Cp%3EMix%20some%20icing%20sugar%20and%20water,%20then%20drizzle%20as%20desired%20over%20the%20top.%20Sprinkle%20over%20a%20little%20more%20coconut%20if%20liked,%3C/p%3E%3Cp%3EAnd%20the%20verdict%20-%20I%20found%20that%20I%20grew%20to%20love%20these.%20They%20had%20hints%20of%20gingerbread,%20and%20softened%20over%20a%20couple%20of%20days%20into%20a%20most%20agreeable%20chewy,%20soft%20cookie.%20Definitely%20making%20again!%20I%20did%20think%20initially%20they%20were%20not%20sweet%20enough%20however%20by%20the%20time%20had%20finished%20them,%20had%20changed%20my%20mind.%20The%20girls%20at%20work%20also%20thought%20they%20were%20just%20right.%20So%20no%20meddling%20needed!%3C/p%3E%3Cp%3EI%20had%20the%20original%20carrot%20version%20of%20these%20saved%20on%20my%20'favourites'%20for%20ages,%20so%20I%20am%20also%20sending%20these%20over%20to%20the%20Bookmarked%20Recipes%20challenge%20for%20February:%3C/p%3E){kind=link}
