Ingredientes

  • 8 x Potatoes, peeled Salt & pepper Freshly grated Parmesan cheese
  • 4 x Large eggs, separated Flour
  • 10 ounce Almonds, minced Oil for deep frying

Direcciones

  1. Preheat oven to 325 F. Boil potatoes till done then remove & whip till very smooth. Add in salt & pepper to taste. Add in cheese to taste, and adjust seasonings accordingly. Add in unbeaten egg whites to potatoes and allow to cold. When cold, scoop potatoes w/ a 4-ounce. ice cream scoop. Roll scooped potatoes w/ your hands till elongated in shape. Set aside while you beat egg yolks. Dip potato `rolls' lightly in flour, then in beaten yolks, then in minced almonds. Deep-fry and finish by baking in preheated oven 5-10 minutes. Egg whites are used in the potatoes as a bonding agent.
