%3C/p%3E%3Cp%3ENot%20too%20long%20ago%20I%20was%20given%20a%20whole%20little%20pile%20of%20coupons%20for%20free%20Duncan%20Hines%20and%20Comstock-Wilderness%20Fruit%20Filling%20stuffs%20as%20part%20of%20the%20Foodbuzz%20Tastemakers%20program.%20Perfect%20timing%20with%20the%20holidays%20coming%20up.%20A%20girlfriend%20of%20mine%20found%20cans%20of%20Comstock%20Fruit%20Filling....Limited%20Edition%20Berry%20Medley.%20Limited%20Edition?%20I've%20never%20experienced%20limited%20edition%20food.....kinda%20makes%20ya%20feel%20a%20little%20special%20or%20something.%3C/p%3E%3Cp%3ELimited%20Edition.%3C/p%3E%3Cp%3EWhy%20limited?%20Why%20not%20always?%20Are%20they%20testing%20the%20market....to%20see%20how%20much%20we%20like%20the%20combination%20of%20Strawberries,%20Raspberries%20and%20Blueberries?%20Come%20on....no%20test%20needed%20guys.%20It's%20wonderful!%20Let's%20remove%20the%20%22limited%22%20and%20make%20it%20a%20permanent%20%22New%22%20Edition%20to%20the%20Comstock%20family%20line.%20Seriously.....out%20of%20all%20the%20pie%20fillings%20I've%20tried,%20this%20is%20my%20favorite.%20There's%20something%20about%20those%20particular%20berries%20that%20work%20so%20well%20together.%3C/p%3E%3Cp%3EAlthough...I%20didn't%20use%20mine%20in%20a%20pie.%20You%20see,%20after%20my%20little%20Duncan%20Hines%20shopping%20spree%20(you%20should%20see%20my%20cupboard!!!%20I've%20got%20some%20fun%20things%20in%20there%20to%20play%20with),%20I%20grabbed%20the%20box%20of%20100%25%20Whole%20Grain%20Blueberry%20Streusel%20Muffin%20Mix%20and%20the%20can%20of%20Limited%20Edition%20Berry%20Medley%20and%20went%20to%20work%20on%20a%20combination%20of%20my%20own.%3C/p%3E%3Cp%3EBerry%20Medley%20Muffins%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20375'%20F.%20Line%2012%20muffin%20tins%20with%20cupcake%20liners.%3C/p%3E%3Cp%3EFor%20the%20filling,%20combine%20the%20cream%20cheese,%201%201/2%20TB%20egg,%20sugar%20and%20vanilla.%20Mix%20with%20a%20spoon%20until%20mostly%20smooth.%20Lumps%20will%20happen.%20But%20if%20you%20use%20a%20mixer,%20all%20the%20filling%20will%20end%20up%20stuck%20on%20the%20beaters.%20Set%20the%20filling%20aside,%20but%20do%20not%20chill,%20while%20we%20get%20the%20muffins%20going.%3C/p%3E%3Cp%3EFollow%20the%20instructions%20on%20the%20back%20of%20the%20box.%20Easy%20stuff%20really...combine%20the%20stuff%20in%20the%20box%20with%20the%20eggs,%20water%20and%20oil....but%20being%20careful%20not%20to%20over%20stir.%20Lumps.....no%20worries.%20Rinse%20the%20can%20of%20blueberries%20that%20came%20in%20the%20box%20with%20the%20muffin%20mix%20and%20fold%20them%20into%20the%20batter.%3C/p%3E%3Cp%3ENow%20for%20the%20fun%20part.%20Not%20the%20%22funnest%22%20part....but%20just%20fun.%20(the%20funnest%20part%20comes%20at%20the%20end%20when%20you%20get%20to%20eat%20them!)%3C/p%3E%3Cp%3EFill%20each%20muffin%20cup%20about%201/2%20full%20with%20the%20batter,%20reserving%20the%20remainder%20of%20the%20batter.%20Then%20put%20a%20dollop%20(about%20a%20tablespoon)%20of%20pie%20filling%20in%20the%20middle%3C/p%3E%3Cp%3ENow%20get%20that%20filling%20that%20we%20set%20aside%20earlier%20and%20put%20a%20dollop%20on%20top%20of%20the%20berries.%3C/p%3E%3Cp%3EI%20think%20its%20about%20a%20tablespoons%20worth%20as%20well.%20Just%20eyeball%20it%20as%20you%20try%20to%20evenly%20divide%20the%20filling%20amongst%20all%2012%20muffins.%3C/p%3E%3Cp%3EGet%20the%20remainder%20of%20the%20batter%20and%20evenly%20divide%20it%20between%20the%20muffins%20to%20cover%20up%20the%20filling.%20If%20it's%20not%20perfect....don't%20stress.%20It'll%20all%20be%20fine%20in%20the%20end.%20I%20had%20a%20few%20that%20weren't%20completely%20covered%20with%20batter.%20Once%20you%20have%20distributed%20the%20remainder%20of%20the%20batter,%20top%20with%20the%20streusel%20that's%20provided%20in%20the%20box%20of%20muffin%20mix.%3C/p%3E%3Cp%3EPlace%20in%20the%20oven%20and%20bake%20for%20about%2020%20-%2023%20minutes.%20Or%20until%20the%20tops%20are%20golden%20brown%20and%20the%20crumb%20mix%20is%20lightly%20brown.%20You%20can't%20do%20the%20toothpick%20test....the%20inside%20is%20just%20too%20darned%20gooey.%3C/p%3E%3Cp%3EGee,%20darn.%3C/p%3E%3Cp%3ELet%20it%20cool%20for%20about%205%20-%2010%20minutes%3C/p%3E%3Cp%3EBut%20wait!!!%3C/p%3E%3Cp%3EYou%20need%20a%20fork!%20Trust%20me%20on%20this%20one.%20This%20is%20one%20muffin%20you%20can%20not%20eat%20without%20some%20sort%20of%20utensil%3C/p%3E%3Cp%3EYou%20know%20what%20happens%20when%20you%20take%20a%20photo%20like%20that?%20It%20ends%20up%20in%20your%20mouth.%20So%20then%20you%20take%20another%20photo,%20just%20in%20case...different%20angle%20and%20pose.....and%20poof!%20That%20one%20ends%20up%20in%20your%20mouth.%20After%20a%20few%20more%20shots......%3C/p%3E%3Cp%3EYa...thats%20what%20happens.%20True%20story.%3C/p%3E){kind=link}
