Ingredientes

  • 3 Tbsp. cornstarch
  • 1 1/2 c. sugar
  • 1/4 c. lemon juice
  • 1 Tbsp. grated lemon rind
  • 3 x Large eggs separated
  • 1 1/2 c. boiling water
  • 1 x baked 9-inch pie shell

Direcciones

  1. Combine cornstarch, sugar, lemon juice and rind. Beat egg yolks; add in to cornstarch mix. Gradually add in boiling water. Heat to boiling over direct heat and boil gently for 4 min, stirring constantly. Pour into pie shell.
  2. Top with meringue and bake 4-5 min at 425F.
