%20%20There's%20just%20something%20special%20about%20having%20your%20mom%20around%20on%20your%20birthday.%20%20(could%20be%20the%20fact%20of%20the%20matter%20that%20you%20wouldn't%20be%20having%20a%20birthday%20if%20it%20wasn't%20for%20her...)%20%20:)%20%20So,%20my%20uneventful%20birthday%20turned%20into%20a%20great%20little%20family%20event.%20%20My%20hubby%20is%20going%20to%20come%20home%20early%20to%20cook%20for%20me%20and%20my%20mom%20is%20going%20make%20our%20traditional%20birthday%20cake.%3C/p%3E%3Cp%3EOur%20family%20is%20fond%20of%20traditions.%20%20And%20birthday's%20were%20one%20of%20them.%20%20For%20my%20brother%20and%20I,%20on%20our%20birthday,%20we%20would%20wake%20up%20to%20see%20the%20house%20decorated%20with%20balloons%20and%20streamers.%20%20But,%20the%20best%20part%20was%20the%20cake.%20%20Mom%20always%20made%20this%20cake...ya%20know,%20tradition%20and%20all.%20%20And%20to%20this%20day,%20if%20mom%20is%20around%20for%20my%20birthday,%20that's%20all%20I%20want%20her%20to%20make.%20%20It's%20simple%20and%20delicious.%20%20Over%20the%20year's,%20she's%20changed%20the%20recipe%20to%20make%20it%20a%20bit%20healthier%20too.%20%20But,%20if%20you%20want%20to%20go%20full%20fat,%20have%20at%20it!%20%20:)%3C/p%3E%3Cp%3ESo,%20Happy%20Birthday%20to%20me!%20%20And%20thanks%20mom!%20%20(now%20it's%20time%20to%20chow%20down%20on%20this%20cake!)%3C/p%3E%3Cp%3EThis%20may%20not%20be%20the%20most%20gorgeous%20looking%20cake...but%20it's%20even%20more%20special%20knowing%20my%20daughters%20help%20to%20make%20it%20for%20me.%20%20(oh,%20yeah,%20and%20the%20Skittles%20were%20their%20idea...not%20normally%20part%20of%20the%20cake...in%20hindsight,%20M&M's%20would%20have%20tasted%20better.)%3C/p%3E%3Cp%3EMint%20Chocolate%20Chip%20and%20Oreo%20Ice%20Cream%20Cake%3C/p%3E%3Cp%3E(*note:%20we're%20scaling%20down%20the%20recipe%20to%20make%20it%20for%20an%208x8%20pan%20-since%20there's%20just%205%20of%20us%20eating%20it-,%20but%20it's%20usually%20made%20in%20a%209x13,%20so%20this%20recipe%20is%20for%20the%20big%20one,%20but%20the%20photos%20will%20show%20for%20an%208x8)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1%20tub%20of%20Lite%20Cool-Whip%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EGet%20out%20your%20food%20processor%20and%20in%20small%20batches,%20pulse%20the%20Oreos%20until%20they%20are%20crumbs.%20%20(should%20have%20no%20big%20chunks)%20Reserve%20a%20few%20tablespoons%20for%20garnish.%3C/p%3E%3Cp%3EThen,%20in%20a%209x13%20glass%20baking%20dish%20add%20the%20Oreo's%20and%20the%20butter%20and%20spread%20evenly.%20%20Put%20in%20the%20microwave%20on%20high%20for%201%20minute.%20%20Remove%20from%20microwave,%20stir%20and%20then%20place%20back%20into%20microwave%20for%2030%20seconds.%3C/p%3E%3Cp%3ENext,%20using%20a%20spatula%20press%20the%20cookie%20mixture%20along%20the%20bottom%20to%20create%20a%20crust%20and%20place%20in%20the%20freezer%20for%20an%20hour.%3C/p%3E%3Cp%3EJust%20before%20you%20remove%20the%20crust%20from%20the%20freezer,%20take%20the%20ice%20cream%20out%20of%20the%20freezer%20and%20allow%20it%20to%20get%20soft%20(but%20don't%20let%20it%20melt!)%3C/p%3E%3Cp%3EWhen%20the%20crust%20is%20ready,%20use%20a%20spatula%20to%20smooth%20the%20ice%20cream%20on%20top%20of%20the%20frozen%20crust.%20%20Put%20it%20back%20in%20the%20freezer%20for%20at%20least%202%20hours.%20%20You%20want%20the%20ice%20cream%20to%20be%20nice%20and%20hard,%20so%20check%20it%20and%20if%20it's%20not%20ready...shove%20it%20back%20in%20for%20a%20bit%20longer.%3C/p%3E%3Cp%3ENow%20that%20the%20ice%20cream%20is%20hard,%20take%20the%20hot%20fudge%20and%20melt%20in%20the%20microwave.%20%20Spread%20it%20on%20top%20of%20the%20ice%20cream...and....back%20in%20the%20freezer.%20%20Another%20hour%20or%20so...needs%20to%20set.%3C/p%3E%3Cp%3EFinally,%20smooth%20the%20cool%20whip%20over%20the%20hot%20fudge%20and%20top%20with%20reserved%20crushed%20Oreo's.%20%20If%20you're%20ready%20to%20eat%20it%20then%20and%20there,%20go%20for%20it....otherwise..%20Back%20in%20the%20freezer!%3C/p%3E%3Cp%3EOkay,%20so%20if%20just%20my%20mom%20had%20made%20this...it%20would%20have%20been%20more%20presentable,%20but%20I%20just%20love%20that%20my%20girls%20helped%20out.%20%20:)%3C/p%3E%3Cp%3EIf%20serving%20from%20the%20freezer,%20let%20it%20sit%20out%20for%20about%2010%20min%20so%20it%20is%20easier%20to%20cut%20out.%20%20Then...HELLO%20BRAIN%20FREEZE!%20%20(cause,%20well,%20yeah,%20you're%20gonna%20gobble%20this%20up!)%3C/p%3E%3Cp%3EHappy%20Birthday...from%20me%20and%20my%20mom.%3C/p%3E){kind=link}
