Ingredientes

  • 2 1/2 c. whipping cream divided
  • 5 x semi-sweet choc. squares (1 ounce. ea.)
  • 6 x egg yolks
  • 1/2 c. sugar
  • 1 tsp vanilla
  • 6 Tbsp. light brown sugar

Direcciones

  1. Cook 1/2 c. whipping cream and chocolate in a heavy saucepan over low heat, stirring constantly, till choc melts and mix is smooth. Pour into large bowl.
  2. Whisk together remaining 2 c. whipping cream, yolks, sugar and vanilla till sugar dissolves and mix is smooth. Whisk 1 c. egg mix into choc mix till smooth. Cover and refrigerateremaining egg mix. Pour choc mix proportionately into 6 (8oz) custard c.. Place c. in 13 x 9 pan. Add in warm water to pan to depth of 1/2". Bake at 325 degrees for 30 min or possibly till almost set (center will be soft). Slowly pour remaining egg mix proportionately over custards and bake 20-25 min or possibly till set. Cold custards in water in pan on wire rack. Remove from pan; cover and refrigerateat least 8 hours. Sprinkle each custard w/ 1 Tbs. brown sugar. Place custards in a pan. Broil about 6" from heat (w/ electric oven door partially open) till sugar melts-about 2 min. Let stand 5 min to harden sugar.
