- In a stockpot, render the bacon with a small amount of oil, add the oil, add the vegetables, and saute until the onions are translucent.
- Add the beef stock, bay leaves, and drained black beans.
- Bring the first boil, then reduce to a simmer.
- Simmer for about 2 hours or until the black beans are tender.
- Remove from heat.
- Adjust the seasonings.
- Garnish with Parsley and serve.
