Ingredientes

  • 4 Lbs Black Beans
  • 4 Gals Beef Stock
  • 4 Ozs Vegetable Oil
  • 1 Lb Bacon- Dice
  • 1 Lb Onions, Spinach
  • 2 Bunch Scallions- Wash, Slice
  • 6 Oz Carrots- Wash, peel, dice small
  • 6 Oz Celery- Wash, dice small
  • 1 Lb Green Peppers- wash, seed, dice
  • 1/2 Cup Garlic- peel, chop
  • 4 Bay Leaves
  • 1/2 Cup Red Hot Sauce
  • 1 Bunch Parsley, fresh- wash, chop fine
  • 1 T Black Pepper

Direcciones

  1. In a stockpot, render the bacon with a small amount of oil, add the oil, add the vegetables, and saute until the onions are translucent.
  2. Add the beef stock, bay leaves, and drained black beans.
  3. Bring the first boil, then reduce to a simmer.
  4. Simmer for about 2 hours or until the black beans are tender.
  5. Remove from heat.
  6. Adjust the seasonings.
  7. Garnish with Parsley and serve.
