Ingredientes
- 4 Lbs Black Beans
- 4 Gals Beef Stock
- 4 Ozs Vegetable Oil
- 1 Lb Bacon- Dice
- 1 Lb Onions, Spinach
- 2 Bunch Scallions- Wash, Slice
- 6 Oz Carrots- Wash, peel, dice small
- 6 Oz Celery- Wash, dice small
- 1 Lb Green Peppers- wash, seed, dice
- 1/2 Cup Garlic- peel, chop
- 4 Bay Leaves
- 1/2 Cup Red Hot Sauce
- 1 Bunch Parsley, fresh- wash, chop fine
- 1 T Black Pepper
Direcciones
- In a stockpot, render the bacon with a small amount of oil, add the oil, add the vegetables, and saute until the onions are translucent.
- Add the beef stock, bay leaves, and drained black beans.
- Bring the first boil, then reduce to a simmer.
- Simmer for about 2 hours or until the black beans are tender.
- Remove from heat.
- Adjust the seasonings.
- Garnish with Parsley and serve.
