Ingredientes

  • 7 gallons ham stock
  • 7 gallons water
  • 1 lb beef base
  • 7 cans drained black beans
  • 7 lbs diced celery
  • 7 lbs diced onions
  • 7 lbs diced carrot
  • 2 cans tomato
  • 4 lbs roux
  • salt, pepper, thyme, and cumin to taste

Direcciones

  1. Bring stock, base, water to boil
  2. Add celery, onion, carrots, diced tomato, and black beans - simmer for 15 minutes
  3. Bring back to boil
  4. Add roux - stir until smooth
  5. Simmer 1 hour until 185 F is reached for at least 15 seconds
  6. adjust seasoning.
