Receta black bean soup

Ingredientes
- 7 gallons ham stock
- 7 gallons water
- 1 lb beef base
- 7 cans drained black beans
- 7 lbs diced celery
- 7 lbs diced onions
- 7 lbs diced carrot
- 2 cans tomato
- 4 lbs roux
- salt, pepper, thyme, and cumin to taste
Direcciones
- Bring stock, base, water to boil
- Add celery, onion, carrots, diced tomato, and black beans - simmer for 15 minutes
- Bring back to boil
- Add roux - stir until smooth
- Simmer 1 hour until 185 F is reached for at least 15 seconds
- adjust seasoning.
