Hearty pork stew!

  • 4.5 lb pork country style boneless pork shoulder, cut 1.5” cubed
  • 1 tbsp star anise powder or 2 whole star anises
  • 1 tsp chili flake
  • 1/2 tbsp salt
  • 3 small sugar rock
  • 1 tbsp salted/fermented black beans
  • 4 to 5 bay leaves
  • Some water
  • A handful of green tomatoes, optional
  • Marinate:
  • ½ tbsp salt
  • 1 tbsp star anise powder
  • 1tbsp cooking wine

Direcciones

  1. In a bowl combine pork and marinate with the spice and set aside for 5 minutes.
  2. Place marinated pork into a heavy pot in medium heat for browning all around the meat. Dish out the meat for later use.
  3. Discard any fat that may have released from browning process and place on the stove again. Add water and scrape the bottom and side of the pot to release all the brown bits. At this point you have brown, rich flavorful liquid.
  4. Add the rest of the ingredients in and add more water if to completely cover the meat. Cover the lid and let it boil. Once it boils, turn down the heat to low for simmer for about for an hour until the liquid is almost dissolved.
