Ingredientes

  • 2 lb Cooked black-eyed peas
  • 2 x Scallions cut into 1/2" pcs
  • 1 x Red bell pepper seeded, finely diced
  • 1/2 x Green bell pepper seeded, finely diced
  • 1 Tbsp. Chopped garlic
  • 1/4 c. Minced cilantro
  • 1/2 c. Extra virgin olive oil
  • 3 Tbsp. Red wine vinegar
  • 1 Tbsp. Whole grain mustard to 2 tbsps
  • 1 x Fresh jalapeno chopped Salt to taste Freshly grnd black pepper to taste

Direcciones

  1. In a large bowl, combine the peas, scallions, bell peppers, garlic and cilantro. Set aside.
  2. In a small bowl, whisk together the remaining ingredients. Pour over the salad mix and combine well. Serve.
