.%20But%20if%20I%20didn%E2%80%99t%20have%20my%20black-eyed%20peas%20for%20wealth%20and%20luck,%20I%20was%20certain%20to%20be%20doomed.%20So%20we%20decided%20to%20go%20to%20Sylvia%E2%80%99s,%20a%20beloved%20soul%20food%20restaurant%20that%E2%80%99s%20been%20open%20since%201962.%3C/p%3E%3Cp%3EOnce%20we%20finally%20arrived,%20all%20was%20well:%20Harlem%20was%20welcoming%20and%20Sylvia%E2%80%99s%20was%20warm%20and%20full%20of%20good%20cheer.%20And%20most%20importantly,%20we%20had%20our%20fill%20of%20slow-cooked%20black-eyed%20peas%20dripping%20with%20peppers%20and%20bacon.%3C/p%3E%3Cp%3EAfter%20that,%20I%20became%20a%20frequent%20visitor%20to%20Harlem%E2%80%99s%20excellent%20restaurants%E2%80%94everything%20from%20church%20kitchens%20to%20the%20all-you-can-eat%20buffets%20with%20the%20diners%20and%20fine%20dining%20establishments%20thrown%20in%20for%20good%20measure.%20But%20I%E2%80%99m%20not%20here%20to%20talk%20about%20Harlem,%20I%E2%80%99m%20here%20to%20talk%20about%20black-eyed%20peas.%3C/p%3E%3Cp%3EThis%20southern%20staple%20has%20nourished%20me%20my%20whole%20life.%20My%20grandparents%20grow%20them%20on%20their%20farm%20and%20nary%20a%20dinner%20is%20complete%20without%20a%20heaping%20bowl%20of%20the%20legumes.%20Of%20course,%20I%E2%80%99m%20a%20bit%20biased%20when%20I%20say%20the%20black-eyed-peas%20from%20Chambersville,%20TX%20are%20the%20best,%20but%20there%20is%20something%20about%20terroir%E2%80%94it%E2%80%99s%20just%20as%20important%20for%20peas%20as%20it%20is%20for%20grapes.%3C/p%3E%3Cp%3EThey%E2%80%99re%20not%20only%20healthy%20for%20both%20your%20body%20and%20the%20earth%20(the%20plants%20release%20nitrogen%20and%20some%20farmers%20plant%20them%20just%20to%20enrich%20the%20soil)%20but%20they%E2%80%99re%20tasty%20and%20versatile%20to%20cook%20with%20as%20well.%20You%20can%20serve%20them%20chilled%20with%20peppers%20in%20a%20dish%20called%20Texas%20caviar,%20you%20can%20add%20them%20to%20your%20queso,%20or%20you%20can%20add%20them%20to%20a%20cheesy%20casserole.%20Though%20perhaps%20the%20most%20classic%20way%20to%20eat%20them%20is%20this%20family%20recipe,%20which%20slowly%20cooks%20them%20with%20bacon,%20peppers,%20and%20Ro-Tel%20tomatoes%20for%20extra%20kick.%3C/p%3E%3Cp%3EIf%20you%20need%20that%20extra%20push%20of%20good%20fortune%20in%20the%20new%20year,%20consider%20eating%20some%20black-eyed%20peas%20on%20Monday.%20Do%20they%20work?%20I%20have%20no%20idea,%20but%20let%E2%80%99s%20just%20say,%20the%20one%20year%20I%20didn%E2%80%99t%20eat%20them%20on%20New%20Year%E2%80%99s%20Day%20I%20broke%20my%20wrist%20skiing.%20Ouch!%20Suffice%20to%20say,%20I%20never%20made%20that%20mistake%20again!%3C/p%3E%3Cp%3EBig%20pot%20of%20Texas%20black-eyed%20peas%3C/p%3E%3Cp%3ECook%20Time%202%20hours%2015%20minutes%3C/p%3E%3Cp%3E1/2%3C/p%3E%3Cp%3Epound%3C/p%3E%3Cp%3Ebacon%3C/p%3E%3Cp%3E2%3C/p%3E%3Cp%3Ejalape%C3%B1os,%20seeded%20and%20diced%3C/p%3E%3Cp%3E1/2%3C/p%3E%3Cp%3Emedium-yellow%20onion,%20diced%3C/p%3E%3Cp%3E4%3C/p%3E%3Cp%3EIn%20a%20large%20pot,%20cook%20the%20bacon%20on%20medium%20low%20heat,%20turning%20once,%20for%2010%20minutes%20or%20just%20until%20some%20of%20the%20fat%20has%20rendered.%20With%20a%20slotted%20spatula,%20remove%20the%20bacon%20and%20place%20on%20a%20paper-lined%20plate.%3C/p%3E%3Cp%3EDrain%20all%20but%202%20tablespoons%20of%20the%20bacon%20grease,%20reserving%20the%20rest%20for%20another%20use.%20Return%20the%20pot%20the%20stove%20and%20add%20to%20the%20pot%20the%20onion%20and%20jalape%C3%B1os.%20On%20medium%20heat,%20cook%20while%20stirring%20occasionally%20for%205%20minutes%20or%20until%20softened%20and%20fragrant.%20Add%20the%20garlic%20and%20cook%20for%2030%20more%20seconds.%3C/p%3E%3Cp%3EAdd%20to%20the%20pot%20the%20dried%20black-eyed%20peas.%20Cover%20with%202%20inches%20of%20water,%20then%20stir%20in%20the%20tomatoes,%20chili%20powder%20and%20salt.%20Chop%20the%20bacon%20and%20add%20it%20to%20the%20pot,%20too.%3C/p%3E%3Cp%3EBring%20the%20pot%20to%20a%20boil%20on%20high,%20then%20turn%20the%20heat%20down%20to%20low,%20cover%20the%20pot,%20and%20simmer%20for%201%20hour.%3C/p%3E%3Cp%3EAfter%20this%20time,%20remove%20the%20lid%20and%20check%20on%20the%20peas.%20Add%20more%20water%20if%20needed,%20and%20then%20continue%20to%20cook%20on%20low%20uncovered%20until%20they%20are%20tender,%20about%20another%20half%20hour%20to%20hour%20depending%20on%20the%20age%20of%20the%20dried%20peas.%3C/p%3E%3Cp%3ETaste%20and%20adjust%20seasonings,%20and%20serve%20warm.%3C/p%3E){kind=link}
