Black-Eyed Peas with Cumin

I had a craving for Black-Eyed peas this week so threw this together on the fly. It worked out really well. The chilli gives a kick but the small amount of spices keeps the flavor simple. Served over rice.

Ingredientes

  • 1 cup black-eyed peas
  • 4 cups water
  • 1 tomato, chopped
  • 1/2 tsp whole cumin seeds
  • 1/4 tsp turmeric
  • 1 green chili, minced
  • 1 tsp salt
  • 1 tsp brown sugar
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp chopped cilantro

Direcciones

  1. Boil peas in water with salt, sugar and turmeric for about 30 minutes. May need to add additional water during cooking.
  2. In separate pan, fry garlic, chili, chopped tomato and cumin in oil for just a minute or two. Don't burn the cumin.
  3. Add the garlic and chili fry to your boiling peas, stir and boil for an additional 15-20 minutes.
  4. Top with cilantro and serve over rice
