%20but%20beautiful,%20flakey,%20and%20savoury%20(only%20very%20rarely%20sweet)%20quick%20breads%20quite%20similar%20in%20texture%20and%20flavour%20to%20what%20is%20called%20a%20scone%20over%20here.%3C/p%3E%3Cp%3ESome%20might%20question%20the%20difference%20between%20a%20scone%20and%20biscuit%20.%20.%20.%20and%20I%20would%20have%20to%20say%20as%20subtle%20as%20it%20is%20.%20.%20.%20it%20is%20there.%20A%20scone%20will%20use%20butter%20and%20either%20cream%20or%20soured/plain%20milk,%20whereas%20in%20North%20America%20biscuits%20use%20either%20shortening%20or%20lard%20and%20buttermilk%20or%20plain%20milk,%20are%20less%20sweet%20and%20more%20savoury,%20and%20can%20have%20things%20like%20cheese,%20bacon,%20onions/scallions%20and%20sometimes%20ham%20in%20them.%20Scones%20can%20have%20these%20things%20in%20them%20as%20well,%20although%20I%20would%20say%20that%20then%20they%20are%20more%20like%20biscuits%20than%20scones.%20Does%20that%20make%20sense?%3C/p%3E%3Cp%3EAnother%20difference%20is%20in%20the%20way%20the%20fat%20is%20added.%20Here%20in%20the%20UK%20the%20fat%20is%20most%20always%20rubbed%20into%20the%20flour%20with%20the%20fingertips,%20whereas%20in%20North%20America%20it%20is%20%22cut%22%20in%20.%20.%20.%20using%20a%20pair%20of%20forks,%20two%20double%20bladed%20knives%20or%20a%20pastry%20blender.%3C/p%3E%3Cp%3EI%20say%20Vive%20la%20difference!%20Both%20are%20beautiful%20and%20scrummy%20and%20moreishly%20delicious%20and%20both%20have%20their%20uses!%3C/p%3E%3Cp%3EToday%20I%20baked%20some%20beautiful%20Black%20Pepper%20Biscuits%20to%20serve%20with%20some%20cheese%20and%20some%20of%20my%20latest%20batch%20of%20homemade%20Spicy%20Plum%20Chutney.%20Oh%20my%20.%20.%20.%20they%20went%20down%20a%20real%20treat.%3C/p%3E%3Cp%3EThe%20biscuits%20were%20flakey,%20savoury%20and%20peppery,%20which%20went%20beautifully%20with%20the%20cheese%20and%20chutney.%20These%20would%20be%20great%20served%20with%20some%20smoked%20gammon%20or%20slices%20of%20crisp%20bacon%20as%20well%20.%20.%20.%20and%20cheese%20of%20course!%20I%20think%20they%20would%20make%20great%20little%20chicken%20salad%20sandwiches%20and%20would%20also%20be%20a%20lovely%20host%20to%20egg%20mayonnaise!%3C/p%3E%3Cp%3EIn%20short,%20I%20just%20can't%20think%20of%20anything%20that%20wouldn't%20taste%20better%20sitting%20on%20top%20of%20one%20of%20these,%20split,%20buttered%20and%20warm%20from%20the%20oven,%20or%20a%20bowl%20of%20soup%20that%20wouldn't%20be%20enhanced%20by%20their%20presence!%20Enjoy!!%3C/p%3E%3Cp%3E*Black%20Pepper%20Biscuits%20(Scones)%3C/p%3E%3Cp%3EMakes%2016%20to%2018%20(2%20inch)%20biscuits%3C/p%3E%3Cp%3EBeautifully%20flurry%20and%20peppery.%20Perfect%20to%20serve%20with%20chutney's,%20cheeses,%20salty%20meats%20(bacon,%20ham,%20proscuitto)%20or%20with%20hot%20soups%20and%20stews.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20230*C/450*F.%20Lightly%20butter%20a%20large%20baking%20sheet.%20Set%20aside.%3C/p%3E%3Cp%3ERemove%208/10%20of%20an%20ounce%20of%20flour%20(1/4%20cup)%20and%20set%20aside.%20Whisk%20the%20remaining%20flour%20together%20in%20a%20large%20wide%20bowl%20with%20the%20baking%20powder,%20soda,%20salt%20and%20black%20pepper.%20Add%20half%20of%20the%20shortening%20in%20bits%20and%20then%20work%20it%20into%20the%20flour%20using%20a%20pastry%20blender,%20two%20forks%20or%20two%20round%20bladed%20knives.%20The%20mixture%20should%20look%20like%20well%20crumbled%20feta%20cheese.%20Scatter%20the%20remainder%20of%20the%20shortening%20over%20top%20in%20bits%20and%20continue%20to%20work%20in%20with%20your%20fingertips,%20until%20you%20have%20no%20pieces%20which%20are%20larger%20than%20a%20pea.%20Shake%20the%20bowl%20occasionally%20to%20move%20any%20bigger%20bits%20up%20from%20the%20bottom.%20Do%20not%20over%20work.%3C/p%3E%3Cp%3EMake%20a%20deep%20hollow%20in%20the%20centre%20of%20this%20mixture%20and%20add%20about%203/4%20of%20the%20buttermilk,%20reserving%20some%20for%20later%20if%20needed.%20Stir%20in%20with%20a%20fork,%20using%20broad%20strokes%20to%20quickly%20pull%20the%20flour%20into%20the%20milk.%20Mix%20just%20until%20the%20dry%20ingredients%20are%20moistened.%20Sprinkle%20the%20remaining%20flour%20onto%20a%20clean%20surface.%20Turn%20the%20dough%20out%20onto%20it%20and%20turn%20to%20lightly%20coat.%20Pat%20lightly%20into%20a%20round%20which%20is%201/2%20inch%20in%20depth.%20Brush%20any%20visible%20flour%20off%20the%20top.%20Cut%20into%202%20inch%20rounds%20with%20a%20round%20biscuit%20cutter,%20using%20a%20sharp%20tap%20up%20and%20down,%20remembering%20not%20to%20twist%20the%20cutter.%20(Twisting%20results%20in%20a%20lop-sided%20biscuit.)%20You%20can%20pull%20the%20scraps%20back%20together%20to%20cut%20out%20additional%20biscuits.%20They%20will%20not%20be%20quite%20as%20tender%20as%20the%20first%20ones,%20but%20good%20all%20the%20same.%20Place%20onto%20the%20baking%20sheet,%20leaving%20some%20space%20in%20between%20each.%3C/p%3E%3Cp%3EBake%20for%206%20minutes%20in%20the%20upper%20third%20of%20the%20oven.%20Rotate%20the%20pan%20and%20bake%20for%20an%20additional%204%20to%206%20minutes,%20until%20they%20are%20a%20light%20golden%20brown.%20Remove%20from%20the%20oven%20and%20brush%20the%20tops%20with%20some%20softened%20butter.%20Serve%20hot.%3C/p%3E%3Cp%3EOver%20in%20The%20Cottage%20this%20morning,%20a%20delicious%20Plum%20Streusel.%3C/p%3E){kind=link}
