  • 1 x pig's trotter (1.5kg) - cut into serving pcs
  • 400 ml black vinegar
  • 500 ml water
  • 200 gm old ginger - skinned and smashed lightly
  • 300 gm brown sugar
  • 1 Tbsp. light soy sauce
  • 1 x salt to taste

Direcciones

  1. Method:BLANCH trotter pcs in boiling water. Remove and drain well. Heat 2 tbsp sesame oil and 1 tbsp veg. oil, fry ginger until golden and aromatic.
  2. Dish out and transfer ginger into a claypot and add in the black vinegar, water and brown sugar then bring to a boil.
  3. Simmer for 30 min until ginger turns soft. Add in the trotter and simmer until it is soft and tender.
  4. Bring a steamer with water to a rolling boil. Place the deep dish with the bundle of herbal chicken to steam for 1 to 1 1/2 hrs. Top up the water in the steamer if necessary.
  5. When done, remove dish, open up the bundle and serve warm.
