%20and%20Gray%20Chapman%20(the%20writer)%20are%20hysterical.%20Prieur%20has%20no%20qualms%20in%20declaring%20one%20red%20%E2%80%9Clike%20a%20bad%20tank%20that%20hasn%E2%80%99t%20been%20cleaned,%20that%20they%E2%80%99re%20just%20throwing%20shit%20into,%E2%80%9D%20while%20Chapman%20slayed%20me%20with%20several%20quips%20that%20I%20won%E2%80%99t%20spoil%20for%20you%20here.%3C/p%3E%3Cp%3EIt%20might%20seem%20like%20an%20easy%20premise%20for%20a%20bunch%20of%20laughs%E2%80%93ooo,%20the%20fancy%20French%20sommelier%20doesn%E2%80%99t%20like%20mass-produced%20wine%E2%80%93but%20it%E2%80%99s%20pretty%20clear%20that%20Prieur%20came%20to%20this%20experiment%20with%20an%20extremely%20open%20mind%20and%20was%20just%20crestfallen%20every%20time%20the%20alleged%20varietal%20was%20revealed%20to%20her.%20More%20importantly,%20she%20made%20a%20point%20of%20showing%20Chapman%20several%20wines%20in%20her%20own%20shop%20that%20were%20less%20expensive%20and%20more%20complex%20than%20any%20of%20the%20ones%20that%20were%20part%20of%20the%20taste%20test,%20and%20that%E2%80%99s%20the%20reason%20why%20Prieur%20has%20rocketed%20onto%20my%20list%20of%20favorite%20lady%20sommeliers%20along%20with%20Gretchen%20Thomas%20of%20the%20Barteca%20restaurant%20group.*%3C/p%3E%3Cp%3EI%20naturally%20ended%20up%20going%20to%20Perrine%E2%80%99s%20shop%E2%80%99s%20website%20and%20after%20lamenting%20for%20a%20bit%20that%20I%20didn%E2%80%99t%20live%20closer%20to%20Atlanta,%20I%20started%20browsing%20around%20and%20found%20a%20great%20little%20treasure%20trove%20of%20recipes%20complete%20with%20wine%20parings.%20There%20was%20one%20for%20raspberry%20chicken%20that%20completely%20caught%20my%20eye%20that%20went%20with%20a%20ros%C3%A9,%20but%20given%20that%20it%20was%20February%20at%20the%20time%20when%20I%20saw%20this%20and%20blackberries%20were%20on%20sale%20all%20over%20the%20place,%20I%20was%20inspired%20to%20do%20a%20little%20modification%20of%20my%20own.%3C/p%3E%3Cp%3EThe%20recipe%20is%20so%20straightforward:%20make%20a%20sauce%20of%20lemon%20juice,%20berries,%20and%20some%20corn%20syrup%20(her%20recipe)%20or%20rosemary%20simple%20syrup%20(my%20take)%20in%20a%20blender,%20then%20heat%20it%20along%20with%20some%20salt,%20pepper%20and%20cornstarch%20to%20a%20boil%20and%20then%20spread%20over%20boneless%20chicken%20breasts%20(her%20recipe)%20or%20chicken%20thighs%20(my%20modification)%20along%20with%20some%20whole%20berries%20and%20bake%20until%20the%20juices%20run%20clear.%20The%20first%20time%20I%20made%20it%20I%20tried%20to%20squeeze%20a%20family-pack%20size%20of%20chicken%20thighs%20into%20one%20dish,%20which%20didn%E2%80%99t%20work%20well;%20the%20second%20time%20I%20spread%20them%20out%20a%20bit%20between%20two%20and%20was%20able%20to%20get%20a%20much%20better%20result.%20Prieur%20suggests%20a%20rose%20with%20her%20raspberry%20sauce,%20while%20I%20was%20recommended%20a%20lovely%20Cotes%20du%20Rhone%20to%20go%20with%20the%20blackberries%20and%20it%20did%20not%20disappoint.%3C/p%3E%3Cp%3EThe%20Cotes%20du%20Rhone%20we%20enjoyed%20with%20the%20first%20attempt%20at%20this%20dish.%20SO%20DELICIOUS.%3C/p%3E%3Cp%3EEven%20better:%20it%20was%20all%20of%20$13,%20well%20within%20the%20$11-$16%20price%20range%20of%20the%20wines%20featured%20in%20the%20article%20and%20likely%20miles%20ahead%20of%20all%20of%20them%20in%20complexity.%20Let%E2%80%99s%20be%20frank:%20life%E2%80%99s%20too%20short%20to%20waste%20it%20quaffing%20mediocre%20wine%20when%20there%E2%80%99s%20so%20much%20good%20stuff%20out%20there.%20If%20you%20don%E2%80%99t%20know%20where%20to%20start,%20go%20to%20your%20local%20shop%20and%20start%20asking%20questions,%20because%20you%20never%20know%20what%20gem%20you%20may%20get%20your%20hands%20on.%3C/p%3E%3Cp%3EBlackberry%20Chicken%3C/p%3E%3Cp%3Eadapted%20from%20Perrine%20Prieur%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees.%20Season%20the%20chicken%20thighs%20liberally%20with%20kosher%20salt%20and%20pepper%20on%20all%20sides,%20and%20then%20place%20into%20two%20baking%20pans%20that%20have%20been%20coated%20with%20olive%20oil%20or%20butter.%3C/p%3E%3Cp%3EIn%20a%20blender,%20combine%203%20cups%20of%20berries%20(make%20sure%20you%20have%20about%20a%20half%20cup%20or%20so%20to%20bake%20with%20the%20chicken%20whole),%20the%20lemon%20juice%20and%20zest,%20and%20the%20simple%20syrup%20until%20well-blended,%20then%20add%20to%20a%20small%20saucepan%20and%20whisk%20in%20the%20cornstarch,%20salt,%20and%20pepper%20to%20taste.%20Bring%20to%20a%20boil%20while%20constantly%20whisking%20and%20keep%20it%20there%20for%20about%20a%20minute,%20then%20pour%20onto%20chicken.%20Sprinkle%20the%20remaining%20berries%20and%20then%20place%20the%20pans%20in%20the%20oven%20to%20bake%20for%20about%2030-40%20minutes%20until%20the%20juices%20run%20clear%20and%20the%20chicken%20reaches%20an%20internal%20temperature%20of%20165%20degrees.%20Serve%20with%20a%20salad%20and%20a%20nice%20glass%20of%20Cotes%20du%20Rhone,%20if%20desired.%3C/p%3E%3Cp%3E*I%E2%80%99ve%20been%20able%2
