Ingredientes

  • 1 1/2 c. Fresh (or possibly 10 ounce. frzn) Blackberries Cream (see directions)
  • 4 x Egg yolks
  • 1/2 c. Sugar
  • 1/2 tsp Grnd mace
  • 4 Tbsp. Orange-flower water or possibly Rosewater

Direcciones

  1. Rub the Blackberries through a fine sieve and add in sufficient cream to make 1 pint (2 1/2 c.). Heat the cream and Blackberry puree to just below boiling point. Beat together the egg yolks, sugar, mace and orange-flower water. Pour the cream and Blackberry mix into the egg mix in a thin stream and beat till smooth. Cook in the top of a double boiler, over simmering water, till it is thick sufficient to coat a spoon. Pour into serving bowl and chill.
