.%20But%20what%20I%20hope%20is%20that%20at%20the%20end%20of%20every%20day,%20I%20can%20rest%20my%20head%20knowing%20I%E2%80%99ve%20been%20the%20best%20person%20I%20can%20be,%20most%20of%20the%20time.%3C/p%3E%3Cp%3EThis%20past%20year%20is%20almost%20over,%20and%20it%E2%80%99s%20been%20an%20interesting%20one.%20A%20couple%20of%20scary%20telephone%20calls%20is%20about%20all%20it%20takes%20to%20make%20you%20realize%20that%20your%20friends%20and%20family%20members,%20even%20your%20parents,%20are%20mortals.%20A%20couple%20of%20arguments,%20falling-outs%20with%20friends,%20is%20about%20all%20it%20takes%20to%20make%20you%20realize%20that%20your%20relationships%20will%20change,%20and%20that%20even%20your%20closest%20friends%20may%20one%20day%20seem%20like%20strangers%20you%20pass%20in%20the%20cereal%20aisle.%20A%20couple%20of%20new%20friends,%20and%20new%20traditions,%20is%20about%20all%20it%20takes%20to%20make%20you%20realize%20that%20it%20doesn%E2%80%99t%20matter%20when%20you%20meet,%20or%20how%20you%20meet,%20but%20that%20you%E2%80%99ve%20met.%20Change%20is%20good,%20for%20better%20or%20for%20worse.%3C/p%3E%3Cp%3EAnd%20as%20strange%20as%20it%20might%20seem,%20a%20recipe%20about%20pimento%20cheese%20is%20completely%20and%20totally%20appropriate%20here,%20today,%20this%20year.%20On%20the%20surface,%20the%20reason%20is%20more%20apparent%20%E2%80%93%20I%20used%20to%20hate%20pimento%20cheese%20(pimento%20cheese%20sandwiches%20were%20more%20common%20than%20PB&J%20during%20my%20childhood),%20and%20this%20recipe%20was%20gobbled%20up%20as%20if%20it%20were%20bread%20pudding%20itself.%20Kris%20and%20I%20were%20both%20watching%20Food%20Network%20one%20night,%20and%20in%20moments%20we%20were%20texting%20about%20pimento%20cheese,%20and%20the%20perfection%20that%20was%20an%20appetizer%20at%20a%20restaurant%20in%20my%20hometown.%3C/p%3E%3Cp%3EBut%20even%20below%20the%20surface,%20this%20recipe%20is%20appropriate.%20A%20little%20less%20of%20this,%20a%20little%20more%20of%20that,%20this%20recipe%20was%20tweaked%20and%20adjusted%20along%20the%20way,%20based%20on%20how%20I%20remember%20it%20to%20be,%20a%20couple%20of%20years%20ago.%20It%E2%80%99s%20an%20interpretation%20of%20what%20used%20to%20be,%20but%20an%20adjustment%20too%20-%20spicier,%20warmer,%20and%20robust,%20but%20also%20a%20little%20bit%20rustic,%20craggy%20along%20the%20edges.%20It%E2%80%99s%20not%20exactly%20what%20I%20remember,%20but%20it%E2%80%99s%20close.%20Like%20so%20many%20things,%20pimento%20cheese%20may%20have%20its%20rough%20patches%20in%20our%20minds,%20but%20we%20try%20to%20forget%20those,%20if%20we%20can,%20and%20we%20try,%20as%20hard%20as%20we%20can,%20to%20move%20on.%3C/p%3E%3Cp%3EBaked%20Pimento%20Cheese%20Spread%3C/p%3E%3Cp%3Echiknpastry%20recipe,%20inspired%20by%20Chef%20&%20the%20Farmer;%20makes%20~3%20cups%3C/p%3E%3Cp%3Etime%20commitment:%20less%20than%201%20hour%3C/p%3E%3Cp%3Ethis%20ain%E2%80%99t%20no%20store-bought%20tub%20of%20pimento%20cheese%20spread,%20that%E2%80%99s%20for%20sure.%20you%20could%20make%20the%20pimento%20cheese%20without%20the%20sausage%20and%20eat%20it%20cold,%20like%20i%20was%20forced%20to%20during%20my%20childhood%20(although%20now,%20i%E2%80%99d%20probably%20like%20it),%20or%20you%20can%20add%20the%20sausage,%20which%20is%20what%20the%20folks%20at%20Chef%20&%20the%20Farmer%20do%20%E2%80%93%20hence%20the%20recipe.%3C/p%3E%3Cp%3Eingredients%3C/p%3E%3Cp%3Efor%20serving:%20thinly%20sliced%20and%20toasted%20baguette,%20veggie%20sticks,%20crackers,%20etc.%3C/p%3E%3Cp%3Einstructions%3C/p%3E%3Cp%3Eheat%20skillet%20over%20medium-hi%20heat.%20add%20garlic%20and%20onion,%20and%20cook%20for%201-2%20minutes%20or%20until%20soft.%20add%20sausage%20and%20cook%20until%20browned%20completely.%20let%20cool,%20and%20use%20paper%20towels%20to%20remove%20as%20much%20fat/drippings%20as%20possible%20from%20the%20sausage.%3C/p%3E%3Cp%3Emeanwhile,%20make%20the%20pimento%20cheese.%20in%20a%20large%20bowl,%20combine%20Neufch%C3%A2tel%20cheese%20through%20cayenne%20pepper,%20and%20using%20a%20mixer%20on%20medium%20speed,%20blend%20thoroughly.%20add%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3Epreheat%20oven%20to%20350%20F.%20add%20sausage%20mixture%20to%20pimento%20cheese%20and%20mix%20together.%20bake%20in%20an%20ovenproof%20dish%20for%2015-20%20minutes,%20until%20browned%20on%20top%20and%20bubbly.%3C/p%3E%3Cp%3ERandom%20Posts%3C/p%3E%3Cp%3ETags:%20cheddar%20cheese,%20Chef%20&%20the%20Farmer,%20chiknpastry%20recipe,%20gruyere%20cheese,%20hot%20sausage,%20Neufch%C3%A2tel%20cheese,%20pimento%20cheese%3C/p%3E){kind=link}
