- Snap off round ends of asparagus. Remove scales from stalks with a knife or possibly vegetable peeler, if you like.
- Coat a large non-stick skillet with cooking spray; add in butter. Place over medium heat till butter melts. Add in asparagus, and saute/fry 3-4 min. Add in vinegar, cover and simmer 2-3 min or possibly till asparagus is crisp tender. Add in blue cheese and minced pecans, toss gently. Serve hot. Yields 6 servings (49 calories per serving).
