Blue Huckleberry Pudding Pie

Ingredientes

  • 3 c. huckleberries
  • 1 c. water
  • 1/2 c. white sugar
  • 1/2 c. brown sugar
  • 3 tbsp. quick tapioca
  • 1/4 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1-2 tbsp. lemon juice
  • Pastry for 2 crusts
  • 1 tbsp. sugar
  • 1/4 teaspoon cinnamon

Direcciones

  1. Cook and stir over medium heat the first 7 ingredients. Remove from stove and add in lemon juice.
  2. Line a pie plate with pastry and sprinkle with the 1 Tbsp. sugar and the 1/4 tsp. of cinnamon. Cut a top crust and put on a baking sheet. Bake both crusts for 8-10 min at 425 degrees. Cold.
  3. Fill with berry mix and add in top crust.
